Christmas Morning

Christmas morning breakfast. A fruity version of my Sausage or Bacon Pancake Bites...

Shelly's Fruity Pancake Bites

1/2 cup Multigrain Pancake Mix, dry
1/3 cup Soy Milk (any milk would do)
1/4 cup Torani Sugar Free Caramel Syrup
Assorted Fruit (I used chopped banana, apple, and frozen blueberries)

Mix pancake mix, milk, syrup together till thoroughly combined. Pour batter into a non-stick 12 cup mini muffin tin that has been sprayed with Pam. Fill about 3/4 way up.

Top each muffin with some fruit (chopped banana, frozen or fresh blueberries, chopped apple, cherries, etc.) Make all one flavor or a combo of fruits. If you set the ingredients out family members and whippersnappers can make their own.

Bake at 350 for 12-14 minutes or until golden. Serve with Shelly's Super Special Syrup for dipping.

Shelly's Super Special Syrup

2 Tablespoons Sugar-Free Maple Syrup mixed with 1 teaspoon Sugar-Free Torani syrup. Any flavor Torani syrup will work. I used SF Raspberry today. Tastes like a jelly donut. The variety pack would be a fun way to experiment.

These can also be made the night before and reheated, makes life easy in the AM if you have a house full of overnight guests or whippersnappers that can't wait to get to the present opening. I prefer them reheated in a toaster oven, they get crunchy versus a microwave but you can do that too.

Healthy Snacks and Christmas Preparations

Last night I ate this healthy and yummy snack while I wrapped some stocking stuffers and watched some holiday must see movies.

Slices of Apple
Dried Juice Sweetened Cranberries
Sliced Almonds & other Nuts
Berries
Protein Granola
Peanut Butter
Almond Butter
Sweetened Ricotta (1/4 cup Ricotta sweetened with 1 teaspoon Sugar Free Torani)

Slice and core an apple (peel if you want), spread toppings on, add almonds and cranberries.


Today I've got a couple of errands and then the cooking of the feast and some goodies (all weight loss surgery friendly of course) begins. Tonight's dinner is mostly seafood (protein heaven) at my house (Feast of the Seven Fishes, Festa dei Sette Pesci.) I'm experimenting with a few new things so if they turn out blog worthy you'll see them.

Tomorrow is still up in the air, depending on the weather. Hopefully after breakfast we'll be headed to the beach (our tradition) for a picnic with leftovers.

If you are a longtime follower of the blog you know another tradition at my house is for my Mum and I to make new ornaments for the tree. I cut the patterns (some I draw free hand, some I just get from the net) from brown paper bag first, then from the felt, then my Mum does the sewing part because I suck at it, then we both do the decorating. It's a team effort. We make ornaments, we've made tote bags, I always make a few food gifts, something fun & crafty that gets us in the Christmas spirit... well that is except when we mess up on something then we curse like truck drivers. Yeah that part is not so festive ;) Here's this year's ornaments...

When my Mum fell earlier this year and she wasn't mobile for awhile I bought her this book on how to make knitted flowers so she'd have something fun to do. She has made some really cool ones. She made these awesome poinsettias. I loved them so much I said she should mount them on scarfs as gifts.

Last week I stood on the post office line from hell mailing one to my sister. She loved it. Here's a picture of me wearing mine today...

12 Days of Chocolate - Protein Mini Muffins

I took my basic Mini Chocolate Protein Muffin recipe and made 12 variations. They make a perfect grab and go breakfast (toss a couple in a snack sized Ziploc) maybe pair it with my Chocolate Covered Cherry or Candy Cane Protein Shake.

I love to take a couple with me when I'm going to coffee with pals since Starbucks has NOTHING for us in their bakery case when everyone is gobbling up goodies I can breakout my healthier delicious treat (but better bring extras to share, non-ops love them too.)

Shelly's 12 Days of Chocolate Protein Mini Muffins

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
1 Tablespoon Canola Oil
3 Tablespoons Multigrain Pancake Mix
2 Tablespoons Unsweetened Cocoa
1 scoop Chocolate Protein Powder
Pinch salt

Mix egg, milk, syrup and oil (applesauce or cottage cheese can sub for oil but 1 T divided between 12 muffins is really not a lot) and combine thoroughly. In a separate bowl, mix pancake mix, cocoa, protein powder (1 scoop = approx 1/4 cup) and salt. Tip dry into wet and stir till combined. Pour into a non stick mini muffin pan that has been sprayed with Pam.

Add something from the topping list to each one. Not too much. 1 cherry, 1 malted milk ball, 1/4 teaspoon peanut butter, sprinkle of coffee, 1/2 a strawberry, etc. Bake at 350 for 10 minutes.

Christmas Fun

Lots of Christmas-y fun yesterday. My Mum and I braved the crowds at the mall. We didn't really need anything but it doesn't seem right to not take a little part in the holiday ritual of mass consumerism.

We had fun. We window shopped, people watched, stopped for coffee, laughed a lot. As we were leaving I was going to get a picture with Santa as a sort of joke gift for my Mum but the line was way too long.

I've never taken a picture taken with Santa. When I was little I would stand in line and just as it got to my turn I would refuse to sit on the big guy's lap. No crying or screaming fits, I just refused. His "elves" would of course give me a candy cane anyway. Score. So every year this would repeat until I started calling it "the line to get a candy cane" instead of "the line to see Santa." The parental units were on to my sugary deception. My true goal was revealed. I just wanted free candy. That put an end to that holiday ritual. So no pictures with Santa still to this day.

When we got home we watched a Christmas movie marathon and ate tidbits...

Cucumber Rounds with Salmon Cream Cheese (just smoked salmon and cream cheese mixed together till well combined) and some with Hummus on top, stuff from the olive bar at the supermarket and these super yummy Beef Lettuce Wraps...


Shelly's Beef Lettuce Wraps with Spicy Raspberry Drizzle

Sliced Tri-tip or Flank Steak
Leaves of Boston Lettuce
2 Tablespoons Sugar Free Raspberry Jam
1 teaspoon any Fruity Vinegar (Champagne, Apple Cider, Raspberry)
dash or two of Southwest Seasoning (any Cayenne, Cumin, Paprika, Oregano Blend)

Wash and separate lettuce leaves. Arrange some sliced beef (also great with grilled chicken) in each lettuce leave. Nuke jam, vinegar, seasoning for 30 seconds till thin, stir. Makes enough drizzle for 6. Drizzle over each beef & lettuce cup. Eat like tacos.

Soooo good.

8 oz. Soy Milk (or 4 oz milk/4 oz. water)
1 scoop Vanilla Protein Powder
1 Tablespoon No Sugar Added Apple Butter
2 Tablespoons Sugar Free Torani Syrup (SF Caramel, SF Brown Sugar Cinnamon, or SF Vanilla would all work)
dash Apple Pie Spice
2-3 Ice Cubes

Whiz in blender till smooth. Top with optional squirt of Homemade, No Sugar Added Whipped Cream, drizzle of Sugar Free Caramel Topping and a dash of apple pie spice.

Dinner: I spent most of the day making meatballs for an event my friend is catering and the rest of it running errands including standing on a hellacious line at the post office mailing a special surprise to my sister. I can't tell you about it until she gets it but later this week I'll share pictures (I have a matching one.) When I finally got home I was wiped. Here's what I managed to wrangle up...

Shelly's High Protein Avocado Dip

1/2 cup Cottage Cheese
1/4 cup Greek Yogurt (I used plain 2%)
1/2 an Avocado
a few twists of Black Pepper
Kosher Salt to taste

Whiz all ingredients in a mini food processor till smooth. This dip is soooo good. You would never know there is cottage cheese in it. I served it with a plate full of cucumber "chips" just some slices of English (Hothouse) Cucumber.

It's also great for dipping meats (moisture is key to eating meat post weight loss surgery) or veggies or use as a high protein salad dressing replacement. Mmmm a dollop of this dip on top of some refried beans and/or ground turkey or beef spiced with taco seasonings would be a great weight loss surgery friendly way to get your Mexican food fix without the big pile of greasy chips or taco shells. You might want to make a double batch, non-ops love it.

Snacks: Stuff out of my bento (above) and a Starbuck's Sugar Free Cinnamon Dolce No Whip, No Foam, Soy Latte

Cool New Product Alert: Chicken Burgers

Spotted these Amylu's Sweet Caramelized Onion Chicken Burgers with Red Bell Peppers and Gouda Cheese at Costco the other day and tossed a box in the cart. I love quick & easy protein sources like this because some days (yep even I have them) you just don't want to spend a lot of time in the kitchen.

They sounded really yummy but I was leery. I always hate buying a big box of something I've never tried. My problem with frozen chicken products is that they usually taste and have the texture of little sponges but these are great and not spongy at all. I served them with some Cucumber Dill Refrigerator Pickles and sliced avocado. It was a great lunch. The burgers have little flecks of sweet bell pepper, caramelized onion and Gouda cheese. Really yummy.

They are all natural (breast & thigh meat), gluten free, no preservatives, no nitrates, no MSG, zero trans fat.

Nutritional Facts

Serving Size: 1 Burger
Servings Per Container: 10
Calories: 150 Calories from Fat: 60
Total Fat: 7.5 grams
Total Carbohydrate: 2 grams
Sugars: 1 gram
Protein: 22 grams

They are fully cooked. Just heat & serve. I pan seared them in a non-stick pan sprayed with Pam for a few minutes on each side. I was worried they would be dry but they were super moist and juicy. According to the box, you can also microwave them or grill them on the BBQ but I thought that might dry them out since they are fully cooked. Moisture is key to successfully eating meats post weight loss surgery.

They came in a box of 10 for $11.99 at Costco. The box contains individual pouches of 2 patties each. Once you open a pouch the burgers need to be used from the fridge within 3 days but you can freeze the pouches for up to 6 months. Just take them down into the fridge the night before you plan on using them.

If you don't have a Costco near you here's where you can email them perhaps they can direct you to a store that carries them near you. They are made by ATK Foods.

Verdict: Yum. Soooo good. They were very juicy and the flavor is great. I will definitely add these to my Pantry Essentials List. Give them a try.

If you are wondering about the Cucumber Dill Refrigerator Pickles those are great too. I've been getting 3 packs of Hothouse Cucumbers at Costco and I always have one sometimes 2 that I need to use before I want to use them. So I make a batch of these... they last at least a week in the fridge and make a great side with burgers, steaks, chicken, cold cut roll-ups.

Shelly's Cucumber Dill Refrigerator Pickles

1 or 2 Hothouse Cucumbers (aka English Cucumbers), sliced very thin
1 (2 oz.) jar Pimentos, drained
1/4 of a White Onion, sliced very thin
1/2 cup any Fruity Vinegar (Champagne, Tarragon, Cider but even plain White will work)
1/2 cup Water
1/2 cup Apple Juice or Cider
1/2 teaspoon Dried Dill
a dash of Kosher Salt
a few twists of Black Pepper

Mix all ingredients together, cover and refrigerate overnight. To serve drain solids from liquid. Drained they are also great mixed into Greek yogurt (sort of like a Tzatziki Sauce) and served with BBQ'd kabobs.

1 cup Soy Milk (any milk will do)
2 scoops CLICK Vanilla Latte Espresso Protein Powder

In blender bottle shake all ingredients about 30 seconds. Pour into microwavable safe mug and nuke 60-90 seconds or heat in pan on stove. Top with Sugar Free Whipped Cream and a sprinkle of crushed SF Candy Cane.

Bake at 350 for 12-14 minutes or until golden. Serve with SF Maple syrup for dipping.

Breakfast Recipes: Sausage Pancake Bites

I had a $1 off coupon the other day for Jimmy Dean Sausage Crumbles. I thought they looked kind of neat. They come in Original, Hot & Turkey. I tossed them in my cart, I figured I'd mix them in some scrambled eggs one morning, sprinkle them on a tortilla pizza, in my Bites (crustless quiches) or drop them in some soup then insomnia hit last night so at 3 AM I messed around in the kitchen and made these...

1/3 cup Soy Milk (any milk would do)
1/4 cup Torani Sugar Free Caramel Syrup
1/3 cup Cooked Sausage Crumbles

Mix pancake mix, milk, syrup together till thoroughly combined. Pour batter into a 12 cup mini muffin tin that has been sprayed with Pam. Fill about 3/4 way up.

Top each muffin with a few sausage crumbles (or sliced leftovers of cooked sausage would work great too.)

Bake at 350 for 12-14 minutes or until golden. Serve with SF Maple syrup for dipping.

Mmmm it's the perfect combination of sweet and salty. They are soooo flippin' good. They are sort of a cross between a McDonald's McGriddle and those Dunkin Donuts Pancake Sausage Mini Corn Dog looking dealios they have but healthier. Perfect breakfast on the go. Toss a couple of these in a snack size Ziploc baggie, pack some protein like this, bring a bottle of water and you'll be waaaay better off then any drive-thru.

Would definitely make a great addition to a Christmas morning breakfast buffet. Thinking next insomnia bout I'll try a bacon version.

Oh and they reheat great. When the rest of the household got up I tossed them in the toaster oven for a few minutes and they were as good as they were at 3 AM.
