Hot Days, Cold Eats: Mexican Layered Salad

We're in the middle of another heat wave in my neck o' the woods. Ugggh. It actually gave me a migraine. I seriously contemplated a move to Alaska. I like salmon. The whole three men for every one woman thing is intriguing too ;) Speaking of... did you know you can burn 10 calories for every 10 minutes of kissing. Sex three times a week burns between 7,500-15,000 calories per year. This is the kind of math I like.

OK back to the other kind of heat... I was miserable for most of the day but when the sun went down I made this salad, ate it outside on the patio, listened to a fierce female music marathon and all was right with the world. Nothing like a cold salad on a hot day.

Greek Yogurt Salad Recipes PotLuck Picnic Lunch DinnerShelly's Mexican Layered Salad

(from top down) Avocado, sliced
Green Onions, diced
Lime Cumin Yogurt Crema "Dressing"
Tomato, chopped
Lettuce, shredded
Black Olives, chopped
Chicken, grilled, chilled & chopped
Cotija Cheese, grated
Refried Beans

Lunch Dinner Recipes Weight Loss HealthShelly's Lime Cumin Yogurt Crema "Dressing"

3 1/2 oz  Plain Greek Yogurt (1/2 a small container)
1 Tablespoon Mayonnaise
Juice of 1/2 Lime
1/2 teaspoon Cumin
dash of Kosher Salt

Mix till well blended. Also great as a dip for meats or veggies.

Tip: Toss a few extra chicken breasts on the grill on the weekend to make making this salad a breeze midweek.

Love your web, had a sleeve 2.5 years ago and had to connvert to a roux. Eating is not too different but have gained some new enthusiam for recipes and trying something different. Eating is fun again instead of a chore. Made peach protein cake,fresh peach slices on top covered with a good reduced balasamic vinegar on top. UMMMMM

Yummmm! I had something similar (but not as the dressing idea!)planned for the kidlettes and me, but they made plans with friends....another night. AND I have beautiful avocados from T.J.'s that really want to be eaten...and soon! Sunday will be the perfect night for this treat! THANKS!

I would reconsider the idea of alaska. My boyfriend's working in Fairbanks right now (I'm in San Diego) and, um, the sun stays out for a huge chunk of the night and it is hot there too. He never stops complaining about the heat. Temecula, I'm sure, is much better. Besides, whenever I pass by Temecula on my way to riverside or vegas I like knowing that eggface is nearby :)

Shelley, What do you consider a serving size for your recipes? Such as your salads and "bites"?

Alaska to me sounds a bit horrifying. All that snow. I hate snow. Hence the reason I don't live in Washington anymore either. That and the crappy wages there.

@celinsc Portion size will really depend on how far out you and what your Dr recommends. I'd ask him what he recommends at your stage.

At 4 years I eat 3 bites and a scoop of some salad. Never more than 1 cup at a sitting. Usually much less. Depends on the protein density.

I made this salad yesterday for dinner because I was craving nachos! More than satisfied the nacho craving in a healthy way! My mother in law raved about the salad and said "don't throw away that recipe!" Thanks AGAIN for all you do for WLS patients!
