Shelly's Spinach & Artichoke Tortilla Pizza - Mission Carb Balance Whole Wheat Fajita Size Tortilla topped Havarti Cheese, leftover Spinach, Artichoke Hearts, Green Onion, Fresh Basil, Mozzarella Cheese, a sprinkle of Parmesan and Italian Seasonings.

How to make them: Preheat oven to 375 degrees. I put 1 drop literally of olive oil on the cookie sheet and spread it around. Place tortilla on cookie sheet. Spread the sauce on the tortilla (pesto, marinara, alfredo, bruschetta sauce, BBQ sauce, hummus, ricotta cheese, (peanut butter or ricotta for dessert pizzas ), whatever.) Put a slice of cheese on top of the sauce and then I add any combination of toppings or leftovers I can find bumping around the fridge. Sprinkle with grated Parmesan if desired. Pop in oven. 10 minutes exactly. Have the oven hot before you do the toppings **Do not let them sit. Pop them in the oven right away or the toppings will make the tortilla soggy versus the yummy crispy porn pictured above.


How much is a serving?

The answer is: serving size can vary. What I eat as a 3 1/2 year weight loss surgery post-op is a very different amount than a 3 month, 6 month, post-op.

For me if the toppings are protein dense like the Philly Cheese Steak Tortilla Pizza or Meatball or Chicken then I eat 2 wedges and call it a day. If they are lighter just cheeses, veggies or pepperoni. I can eat the whole pizza but remember these are 6" fajita size tortilla (not typical size tortillas) If it's lighter toppings and I'm having a scoop of bean salad or a green salad with it I eat 2 wedges.

My standard line when it comes to portion size is: go with what your medical posse recommends.

What's the nutritional value on (insert Eggface recipe)?

I don't put the nutritional info on my recipes because frankly that can vary so widely. I use full fat cheeses (the good stuff) others may use low fat or (horror) non fat, the % fat on beef, differences in packaged products, brands of protein, etc. will change the info dramatically.

I eat full fat (cheese, mayo, butter, olive oil, etc.) Fat = flavor. I eat it in moderation (thanks to my pouch) if I ate Reduced Fat or Fat Free (aka nuclear waste) I wouldn't be satisfied and in an hour I'd be thinking about my next meal. I eat yummy, lip smacking stuff so I never feel like I'm on a diet or suffering in my new life.

What I do when I need to find the nut info is go to a site like fitday.com type in each individual ingredient, this will give you cals, carbs, fats, protein gram totals, then divide by the # of servings you get from the dish. It's not exact but it's close enough for me.

Wow your website is awesome.. It has giving me better ideas on what to eat and how to make it.. I have two kids and I use to eat everything they did cuz it was there and easy to make.. I'm not the best planner and I rarely cook anything different, (no ideas on anything different), til now!! I have tried your Pizza on regular size multi-grain, low in carbs torts cuz I couldn't find the fajita size ones.. But I was so proud of myself/pouch cuz I couldn't eat the whole thing and thats been my problem is eating so much and everything, I thought I had ruined my pouch and stretched it out beyond repair!! But your recipes have proved to me that it's just been that I haven't been eating right!! Thank you again for all the tips and awesome recipes!!

I'm curious as to what you do with the other half of the pizza if you aren't able to eat it?

My thing is, it's hard to throw food away but I don't necessarily want to keep eating it over and over.

I just had WLS on April 12, and realized there is one thing I am going to miss of everything (or maybe because the 15th was my birthday) and it is PIZZA! I was wondering how long it was for YOU before you could eat -or tried to eat these pizzas of yours! I hope I can tolerate them at some point and I CANNOT wait to try some of these you have on your pizza porn page. It just makes me smile, thanks!

Hi Marlena, Thanks for your note. I was cleared for everything as tolerated at 8 weeks... a wedge or 2 of a tortilla pizza was eaten very early on but you know everyone's plan is different.

Your tortilla pizza's inspired me. I spent two months making every type of pizza that I thought would taste good. I have issues with leftovers, but if I put them on a low carb tortilla and covered with cheese they miraculously went down fine...lol.

I am a huge eggface fan and If you ever wrote a cookbook I'd not only buy one but I'd do everything I could to promote it.

I must say that anything I've made from your site has been excellent. Thanks for sharing your tortilla pizza recipe. I just made one for lunch using a Mama Lupe tortilla (I haven't found the Mission brand near me), tomato sauce, LF shredded cheese and turkey pepperoni. It was excellent and I felt like I was having a good meal because I could eat it all and it visually filled my plate, but in reality, didn't have much to it...

Easy and delicious! Great lunchtime recipe... thanks Eggface!

I love your blog! I had VSG just over 2 weeks ago, and am looking for creative ways to eat. I did come up with a different pizza crust (parmesan cheese cooked in a non-stick pan) but these look delicious.
