Getting enough protein in the first few weeks post weight loss surgery is pretty difficult without protein shake supplementation and some of us continue to use them on our weight loss journey on those days we just don't feel like a hearty breakfast, need a protein boost in the day or to fuel our fitness workouts. I live in an area that gets HOT... icy cold protein shakes are my summer staple and waaaay healthier than a $$ coffee shop frappawhatever. I love to add low calorie additions to my protein shakes to change them up. I've gathered together some of my favorites...

A day in my pouch is a series of blog posts to show what a typical daily menu looks like in my post weight loss surgery world. Here's what I ate yesterday...
Breakfast: Mixed up a Double Stuffed Cookie Protein Shake (one of my favorites) in my shaker bottle to take with me as I walked around the Farmer's Market. I made it with soy milk but it's great with almond milk, water, whatever. It tastes basically like a liquid Oreo cookie. Yum.

I didn't stay long at the market, it was sort of June gloomy. One spin around to pick up a few things for the week: asparagus, tomatoes, snap peas, onions, a 3-pack of blueberries, raspberries and strawberries, another small bag of cherries, avocados, and some citrus to add to the water I need to drink more of. I ran a few more errands around town... paying bills (ugh) and a final stop at Trader Joe's for a tray of chicken breast tenders for dinner.
Lunch: I was on a cleaning kick yesterday washed windows, dusted walls and baseboards... I know?! I must have been possessed. The inspiration doesn't hit me often so when it does I just go with it. I took a break outside with my bento lunch.
Pink Box (top left): Hard-boiled Egg sprinkled with Bagel Spice (basically all the stuff on an Everything Bagel without the bagel)
Green Box (top right): Cherries
Blue Box (bottom left): Peas and Carrot Stick Dippers
Orange Box (bottom right): Dill Greek Yogurt Dip (just Plain Greek yogurt with a dash of dried dill, salt & pepper)

Dinner: I was in the mood for saucy, cheesy Italian food deliciousness. This fit the bill perfectly. It's so easy with a few store bought ingredients, it's sort of a cross between Eggplant Parmesan and Chicken Parmesan but with way less work.
Shelly's Easy Eggplant & Chicken Parmesan
6-8 Chicken Tenders, slightly pounded
1/4 cup Spelt Flour
dash of Salt
a few twists of Black Pepper
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1 cup Marinara Sauce
1 (9.9 oz.) can Trader Joe’s Grecian Style Eggplant With Tomatoes & Onions
1/4 cup Shredded Italian Blend Cheese
Place first 6 ingredients in a Gallon Ziploc bag and shake till lightly coated. There will be a little leftover seasoned flour in the bag, discard it, you need a bit more in the bag to ensure good coating. Saute coated chicken in a non-stick pan that has been sprayed with non-stick cooking spray (or a little drizzle of olive oil.) Cook about 5 minutes each side till cooked through and lightly golden. Place chicken in a Pyrex casserole dish. Mix 1 cup of jarred marinara sauce (I use Rao's Tomato Basil) and 1 can of Trader Joe’s Grecian Style Eggplant With Tomatoes & Onions. It's sort of like Ratatouille or Caponata without the capers, both of which you could sub or roast some eggplant, onions, peppers and blend those in (not as quick though.) Mix the eggplant and sauce till well blended. Pour over chicken and top with shredded Italian Blend Cheese. Bake for 25 minutes till bubbly and golden.
I served it with cannelini beans. I just sauteed an onion till golden, tossed a rinsed and drained can of beans in, a twist of pepper and cooked till heated through.

Friday Five
Today's Friday Five is in honor of Memorial Day weekend. 5 easy ways you can show kindness to our men and women in uniform, those that have served and those that continue to protect us.
1. Do you have DVDs taking up space in your closet or a pile of them stacked in the corner of a room? I do. I have in the past dropped them off at the Friends of the Library for their annual sale but wanted to share another option I just found out about: Dvds4vets.org sends films to more than 1000 veterans facilities to benefit our wounded soldiers. I love this way to help brighten the lives of others, recycle and bonus it's giving me much needed inspiration to clean my closet.
2. Operation Gratitude is a great organization that makes care packages for military personnel with letters, snacks and toiletry items. FYI they save us from ourselves too as they take Halloween candy!
3. Are you a member of an airline frequent flier program? The Hero Miles Program provides round-trip airline tickets to wounded, injured, and ill service members and/or their families who are undergoing treatment at a military or VA medical center; or who are attending an authorized event. I know I have miles on a few different airline FF programs and I dare say I will never reach the amount for a free trip so why let the miles go unused. Some programs don't roll-over the miles each year so make a note on your calendar to check and donate if you can.
4. Still one of my favorites are Blessing Bags. My goal is to make a few a month of these and pass them out to those in need in my local community (Sadly, veterans are overrepresented in the homeless population in America.) Putting these bags together is a great project to do with kids (your own whippersnappers, Girl Scout Troops or Boy Scouts, Sunday School Class) to teach them about helping others. You'll need a few Gallon Size Ziploc Bags and the stuff (The $1 store is great place to find stuff for your bags and on your next trip save those hotel courtesy lotions, etc.) I got into a conversation with my Dr. the other day and was telling him about these bags and he gave me $20 to make a couple up on his behalf. Wasn't that cool?! So here's Dr. D.'s bags...

Post Weight Loss Surgery Menus: A day in my pouch

Breakfast: The cherries were great this weekend at the Farmers' Market. I picked up a couple of pounds. The pitting them is the pain but worth the work, half have been frozen for future protein shakes and half are being turned into yummy breakfasts this week.
This morning a few became this delicious Cherry & Raspberry Cannoli Parfait: 1/4 cup Ricotta Cheese sweetened with a pump or 2 of Sugar Free Torani Syrup (I used 1 pump SF Vanilla and 1 pump SF Almond), a few Raspberries, a few Cherries and I topped it with a squirt of No Sugar Added Homemade Whipped Cream. This was a great way to start the day.

I bought a basket of little grape tomatoes at the market this weekend. I thought I might make a bean salad with them but we've popped a few too many in our mouth. They looked so pretty on the counter in my new bowl. I love these commemorative bowls Pyrex issued for their 100 year anniversary...
I bought the set and justified my purchased by purging my kitchen cabinet of plastic containers. I was always trying to find a matching lid. I'd pull one out and they'd all fall out... it drove me batty. I tossed all but a few out and replaced them with these cute bowls. They make me smile.

Lunch: I filled the bento box and set up shop on the patio, did some work on the computer, ate and then decided I would rake and pull weeds. I think I overdid it because my arms are now jelly. I could barely lift my fork to my mouth at dinner. I need to beat up my BOB (Body Opponent Bag) more, build my upper body strength. I haven't been angry enough.

Dinner: I made my Ricotta and Sausage Stuffed Spaghetti Squash. I usually cook the squash, scrape it out, make the filling and stuff it back into the hollowed out squash to bake.
This time I just dumped it all into a casserole dish. It's not as fancy or pretty but it has the same great taste. Same bake time as the original recipe.
Snacks: Too much coffee and it's National Devil's Food Cake Day and I'm celebrating as I type. I'm not really sure what's the difference between Devil's Food Cake and just a regular old Chocolate Cake really but I made a batch of Mini Chocolate Protein Muffins actually they are Chocolate Cherry. I dropped one cherry in the center of each muffin.
Two are my dessert tonight. Nom nom nom. They are great to toss in a snack sized Ziploc baggie bring them along when you are going to coffee. When everyone is having something from the bakery case you'll have something too. Speaking of coffee... have you seen that video of the Starbuck's employee going off on a customer. I'm worried about the world. We are way too high strung and quick to go from zero to 100 emotionally, incidents like this one, road rage, shootings. Big plug for meditation. It has helped me learn to chill. I used to be a bit of a hot head in my younger years (1/2 Sicilian and born & raised New Yorker both known for their umm passion) but meditation has helped... well that or I'm just getting old ;)

Cha-cha-cha Chia Jam
I can't wait to share this with you. If you have spent much time on Pinterest in the past few months you have seen a ton of Chia Pudding recipes. I admit I got sucked in. I bought a bag of Chia Seeds and gave it a try. Fail. OK tried again. Fail. One more time. Nope. To be fair, one attempt was was sort of edible but nothing I would incorporate into my life on purpose.
So I had this opened bag of chia seeds in the pantry and after a little Internet search I saw you could also make Chia Jam. All the recipes I found used sugar and I wanted to make a sugar free substitute version... I thought well what's the worst that can happen... it might be an inedible fail... been there, done that...but holy moly... this Chia Jam is actually a WIN! It's sooo flippin' good. I can't wait to experiment with other flavors and fruit combos.
About Chia Seeds: Cha-cha-cha Chia. Yes, those seeds you used to smear on pottery shapes and grow grassy hair. I know... you are thinking "Michelle, why would I want to eat those?" Well... yeah I'm not sure I had the answer till I made this jam. Chia is an edible seed (salvia hispanica) grown in Mexico that dates back to the Mayan and Aztec cultures. "Chia" means strength and folklore claims they used the tiny seeds as an energy booster. This actually does make sense because they contain a lot of good nutrients... omega-3s, protein, fiber, antioxidants, calcium. The hipsters on Pinterest claim they help you lose weight but the science is iffy on that one. The little seeds swell and suck up liquid big time so the idea I guess is they make you feel fuller. I'm not sure about all of that... I just saw enough pins on Pinterest about that damn Chia Pudding I gave in and bought some. Perhaps one day I will love one of my attempts at that pudding enough to share it but I doubt I'll want to use up my chia seeds in any other way then making this yummy jam!
Shelly's Berry Good Chia Jam
1 cup Berries (fresh or frozen, if using frozen defrost)
3 Tablespoons Sugar Free Raspberry Torani Syrup
2 1/2 Tablespoons Chia Seeds
In a small nonstick pot cook the berries (I used fresh raspberries and frozen, defrosted wild Maine blueberries) and syrup over low to medium heat for about 5 minutes, stirring and smooshing (is that a word?) the berries till mixture just begins to bubble and the berries have softened.
Add the chia seeds. I got mine at Trader Joe's but I put an online link above in the recipe in case you can't find them. Try a health food type store if your local supermarket doesn't carry. Cook and stir about 10 minutes, it will thicken (and thicken more as it cools.)
Remove from heat. I poured it into a jelly jar and let it cool on the counter then put the lid on and store it in the fridge for up to a week. You'll eat it long before the week is up.
It's a great no sugar added topping for Greek yogurt, ricotta or cottage cheese, ricotta pancakes, smeared on a slice of protein cake or a protein muffin, as a protein ice cream topping, stirred in oatmeal (a spoon of powdered peanut butter and a spoon of this jam = PB&J heaven) Pictured above you'll see 4 of my most recent breakfasts.

More Eggface Breakfast Ideas
So I had this opened bag of chia seeds in the pantry and after a little Internet search I saw you could also make Chia Jam. All the recipes I found used sugar and I wanted to make a sugar free substitute version... I thought well what's the worst that can happen... it might be an inedible fail... been there, done that...but holy moly... this Chia Jam is actually a WIN! It's sooo flippin' good. I can't wait to experiment with other flavors and fruit combos.
About Chia Seeds: Cha-cha-cha Chia. Yes, those seeds you used to smear on pottery shapes and grow grassy hair. I know... you are thinking "Michelle, why would I want to eat those?" Well... yeah I'm not sure I had the answer till I made this jam. Chia is an edible seed (salvia hispanica) grown in Mexico that dates back to the Mayan and Aztec cultures. "Chia" means strength and folklore claims they used the tiny seeds as an energy booster. This actually does make sense because they contain a lot of good nutrients... omega-3s, protein, fiber, antioxidants, calcium. The hipsters on Pinterest claim they help you lose weight but the science is iffy on that one. The little seeds swell and suck up liquid big time so the idea I guess is they make you feel fuller. I'm not sure about all of that... I just saw enough pins on Pinterest about that damn Chia Pudding I gave in and bought some. Perhaps one day I will love one of my attempts at that pudding enough to share it but I doubt I'll want to use up my chia seeds in any other way then making this yummy jam!
Shelly's Berry Good Chia Jam
1 cup Berries (fresh or frozen, if using frozen defrost)
3 Tablespoons Sugar Free Raspberry Torani Syrup
2 1/2 Tablespoons Chia Seeds
In a small nonstick pot cook the berries (I used fresh raspberries and frozen, defrosted wild Maine blueberries) and syrup over low to medium heat for about 5 minutes, stirring and smooshing (is that a word?) the berries till mixture just begins to bubble and the berries have softened.
Add the chia seeds. I got mine at Trader Joe's but I put an online link above in the recipe in case you can't find them. Try a health food type store if your local supermarket doesn't carry. Cook and stir about 10 minutes, it will thicken (and thicken more as it cools.)
Remove from heat. I poured it into a jelly jar and let it cool on the counter then put the lid on and store it in the fridge for up to a week. You'll eat it long before the week is up.
It's a great no sugar added topping for Greek yogurt, ricotta or cottage cheese, ricotta pancakes, smeared on a slice of protein cake or a protein muffin, as a protein ice cream topping, stirred in oatmeal (a spoon of powdered peanut butter and a spoon of this jam = PB&J heaven) Pictured above you'll see 4 of my most recent breakfasts.

Breakfast for Mom: Baked Raspberry Pancake
Start your Mother's Day with my protein packed, delicious Baked Raspberry Pancake (aka Clafoutis "kla-foo-TEE") a traditional French dish of fruit suspended in a pancake-like batter. It sounds fancy pants and hard to make but don't worry it actually takes just minutes to prepare this breakfast... in a blender!
It'll be a beautiful star on a brunch buffet. Mom will be super impressed...or Dad's you might consider this one for breakfast in bed. It's super easy for you and the kiddos to make together and Mom will love that you didn't use every pan and utensil in the kitchen to make it.
Shelly's Baked Raspberry Pancake (Clafoutis)
1 - 6 oz. container Fresh Raspberries
For the batter:
2 Eggs
3/4 cup Almond Breeze Almondmilk Hint of Honey Vanilla
1/4 cup Cottage Cheese
1/2 cup Multigrain Pancake Mix
1/4 cup Vanilla Whey Protein Powder
1/4 cup Sugar Free Vanilla Syrup (found in the coffee aisle)
Arrange raspberries evenly in a baking dish or deep pie plate (any size around 8x8x2 would work) that has been sprayed with non-stick spray.
Whiz the batter ingredients in a blender till smooth. Pour batter over top of the berries.
Bake at 425 for about 25 minutes or until puffed and lightly golden brown. I cut it into 8 pieces but it you have more on a buffet you could even do 16 squares.
Serve hot or room temperature (a great brunch buffet item because it can sit a bit) with a drizzle of warmed sugar free maple syrup or topped with a dollop of Greek yogurt.
I used Almond Breeze Almondmilk Hint of Honey Vanilla in this recipe which added less than 60 calories to the whole dish, a much healthier choice than the heavy cream traditionally used in Clafoutis. It also gave the dish a nutty sweetness that paired perfectly with the raspberries. Along with the protein from the eggs I added cottage cheese and protein powder. Mom can have a decadent treat on her special day and still maintain her healthy lifestyle.

Best Obesity Health Blogs of the Year
I am so honored that The World According to Eggface was selected by Healthline as one of the Best Obesity Health Blogs of the Year. Blogging my weight loss journey helps me keep my head in the game, staying accountable to my lifestyle changes. Knowing you are all out there is a great comfort. I never feel alone. I've got an awesome group of people who "get it" just a few keystrokes away. Thank you for being a part of my support system.
It makes me smile when I get a message saying that a recipe has become a family favorite or a tip helped. I hope the blog continues to help others in their journey, taking a little of the fear of the unknown out of life post weight loss surgery, passing along some tips, information and resources and hopefully helping to dispel some misconceptions along the way.

Healthy Meetings (or Parties) Made Easy
Food and beverages are often a part of a meeting (or any get-together.) For someone trying to maintain a healthy lifestyle that usually means they'll have to search the table to find the "good for me" foods in a sea of not so great choices. I wanted to share a few tips for hosting a meeting to help support your employees, friends, and all those in attendance in their health goals.
Tips for hosting a healthy meeting...
• Check the restaurant web site ahead of time to see if nutritional information is provided.
• Choose a restaurant that offers a wide variety of menu selections: nutritious foods that are prepared with low-fat cooking methods (grilled, baked, steamed), include a variety of leafy greens, lean meats and a colorful array of textures, look for freshly prepared items that use local ingredients.
• Avoid menu items with high fat, high sodium sauces and provide salad toppings like cheese, nuts and dressings on the side so adding them is optional.
• Encourage appropriate portion sizes by providing luncheon size plates.
• Provide low or no-calorie drink options.
• Provide fresh fruit or low or no-sugar desserts.
• Have a no candy dish rule. You can easily and mindlessly consume several hundred extra calories in candy coated chocolate pellets and gummy creatures.
I recently got a chance to test these tips out by ordering off the Rubio's catering menu. Rubio's is synonymous with San Diego putting down it's roots here back in 1983 with it's first walk-up stand in Mission Bay, San Diego. I love the Rubio's story. Rubio's now operates over 190 restaurants. Find a Rubio's near you.
Rubio's provides so many choices that make it pretty simple to keep your next meeting healthy. Rubio's menu is freshly prepared with low fat cooking methods. They only use boneless, skinless white meat chicken, lean "trimmed" steak, sustainable and socially responsibly seafood sources for their grilled salmon, mahi mahi, tilapia, and shrimp. They don't use lard or MSG. They will happily make changes like leaving a sauce on the side or exchanging protein sources on any of their menu items. They offer a free salsa bar which is a great way to dress a salad in a flavorful but low calorie way.

I ordered protein packed Grilled Chicken and Steak, Black Beans, "No-Fried" Pinto Beans and Mmmm Guacamole off Rubio's catering menu. I picked up a bag of salad so everyone could build their own healthy salad creation. Rubio's also has a great Balsamic and Roasted Veggies Salad with Grilled Tilapia another excellent choice.
You'll find lots of salsa choices (from mild to muy caliente) on the free salsa bar. Pictured are my two favorites Roasted Chipotle and Mild Salsa. They made a delicious, low calorie salad dressing.
I jazzed up water bottles with colorful duct tape to make them more festive. There's even lemon and lime wedges on Rubio's salad bar to make your water have a bit more pizazz without adding sugar.
I made a little fruit salad which is a great choice for "dessert" I put a little Mexican spin on it by squeezing a little lime juice on it. Individual plastic cups helps with portion control and makes it portable so you can take it on an after lunch walk.
I'd definitely recommend having Rubio's help you make your next meeting a healthy and delicious one.

DIY Craft Project: Protein Bar Bouquet
My local supermarket floral department makes really cute "Candy Bar Bouquets" and as I was walking by a display of them the other day I thought I'm going to make a healthier version that I can have. I watched a few online how-to videos and picked up most of my supplies at the Dollar Store. I think it came out super cute!
It would be a great gift for a fellow health and fitness conscience pal, teacher's gift, personal trainer, support group leader, friend having surgery, doctor's office staff, or Mom.
What you need:
Container: Small Vase or Mug
Foam Pool Noodle
Serrated Knife
An Assortment of Protein Bars
Wooden Skewers
Garden Pruners or Heavy Duty Scissors
Clear Packing Tape
Ribbons, Tissue Paper, Silk Flowers to decorate
Tape wooden skewers to the back of your protein bars. You may have to cut the skewers down a bit depending on the size of your container. Heavy duty scissors or garden pruners work great for this. Set aside.
Cut the pool noodle to fit your container. Insert it into your container. You can cover the noodle with tissue to hide it or use ribbon like I did. There won't be a lot visible after you insert all your protein bars.
Insert your skewered protein bars into noodle in sort of a fanned out pattern. Amount of bars you need will depend on the size of your container.
Jazz up your bouquet with ribbon and silk flowers. That's it. It was an easy and fun DIY craft project. If you make one I'd love to see it snap a pic and tag it with #Eggface on Instagram or Twitter or message me the photo on Facebook.

Tape wooden skewers to the back of your protein bars. You may have to cut the skewers down a bit depending on the size of your container. Heavy duty scissors or garden pruners work great for this. Set aside.
Cut the pool noodle to fit your container. Insert it into your container. You can cover the noodle with tissue to hide it or use ribbon like I did. There won't be a lot visible after you insert all your protein bars.
Insert your skewered protein bars into noodle in sort of a fanned out pattern. Amount of bars you need will depend on the size of your container.
