Hard cooked eggs are a perfect protein packed snack or small meal. A single large egg packs 6 grams of protein and only 78 calories. Add a few nuts or a cold cut roll up and you have a great post weight loss surgery lunch. They are great as is but if you want to jazz them up a bit here's some of my favorite deviled egg recipes.

Shelly's Hummus Za'atar Deviled Eggs
4 Hardboiled Eggs
2 Tablespoons Greek Yogurt, plain
2 Tablespoons Hummus (any flavor)
dash of Kosher Salt
a few twists of Black Pepper
sprinkle of Za'atar (store bought or make it)
Hard cook eggs. Cool. Cut in half. Remove yolks and mash with yogurt and hummus till smooth-ish. Add salt and pepper. Spoon back into egg whites. Sprinkle Za'atar spice on top.
How I hard cook eggs: Place eggs in pot. Fill pot with cold water till 1" over eggs. Bring to boil. Reduce heat and cook for 20 minutes. Pour off hot water and cover eggs with very cold water. This is an important step which prevents the greenish ring you sometimes see on yolks. When eggs are cool enough to handle. Crack & peel away shell. Chill.
