Green Eggs

I think Dr. Seuss (and Sam) would have loved these Green Eggs.


Shelly's Pesto Deviled Eggs

5 Hard Boiled Eggs
1 Tablespoon Fage Greek Yogurt
1 Tablespoon Mayonnaise
1/4 cup Pesto Sauce (Homemade or Storebought)
1/4 cup Parmesan Cheese, grated
Kosher Salt to taste
a few twists of Black Pepper
Toasted Pine Nuts for garnish

Hard cook eggs. Cool. Cut in half. Remove yolks and mash with above ingredients. Spoon back. You can use one of these gadgets to make them puuurty but I only get that fancy at the holidays (or when Martha Stewart from time to time demon possesses my body.) Garnish with toasted pine nuts.


Shelly's Homemade Pesto

About 1 1/2 cups Fresh Basil Leaves, loosely packed, stemmed
1/4 cup Toasted Pine Nuts
1/4 cup Parmesan Cheese
2 cloves Garlic
2 Tablespoons Good Olive Oil
1/4 teaspoon Kosher Salt
a few twists of Black Pepper

Toast the pine nuts in a hot dry pan for about 2-3 minutes. Don't leave them. Set aside till cool. Put the basil, toasted pine nuts, Parmesan cheese, garlic, salt and pepper in a mini food processor and whiz till a paste forms. Add olive oil. Whiz till combined. Scrape the sides of the bowl. Whiz again. Refrigerate and use within three days or freeze.
