It's National Cheese Pizza Day!

Oooooh talk about the ultimate holiday.

Celebrate with a Tortilla Pizza. All the yummy toppings but considerably less carbs using a low carb fajita size tortilla. Quick and easy, weight loss surgery friendly lunch, dinner... heck I won't tell have one for breakfast ;)

Here's some recent creations I've made. Hope it inspires you to make your own...

Shelly's Bruschetta Three Cheese Tortilla Pizza - Mission Carb Balance Whole Wheat Fajita Size Tortilla topped with Bruschetta Sauce, Provolone, Fresh Asiago, Parmesan and Italian Seasoning.

Bariatric Surgery Weight Loss Fitness Health Low CarbShelly's Pesto Mushroom and Onion Tortilla Pizza - Mission Carb Balance Whole Wheat Fajita Size Tortilla topped with Pesto Sauce, Sauteed Onions and Mushrooms, Fresh Asiago and Italian Seasoning.

How to make them: Preheat oven to 375 degrees. I put 1 drop literally of olive oil on the cookie sheet and spread it around. Place tortilla on cookie sheet. Spread the sauce on the tortilla (pesto, marinara, alfredo, bruschetta sauce, whatever.) Put a slice of cheese on top of that and then any combination of toppings or leftovers I can find bumping around the fridge. Sprinkle with parmesan. Pop in oven. 10 minutes exactly. Have the oven hot before you do the toppings **Do not let them sit. Pop them in the oven right away or the toppings will make the tortilla soggy versus the yummy crispy porn pictured above.

If you can't find the Mission Carb Balance Whole Wheat Fajita Size Tortillas I use, those flatout foldits cut in half are great (Hungry Girl Wheat & Flax variety) those are sometimes in the deli department of supermarkets.

Hi Shelly!
First off- LOVE your site. I am a 3 month post op and have been visiting "other" sites and what a fresh air your site has been for me! I tried a tortilla pizza for the first time last night. It was great! I have one question though- how can I get a crispy crust all the way through and not just on the edges? Any tricks you'd like to share?

Scarletina, Have the oven preheated and get them in and baking right after you make them and you will get crispy yumminess everytime :)

If you haven't seen all my posts on OH I just want to say thanks again for all you do for us. You are truly my hero!

I am definitely going to make a pizza tonite- my first one- cant wait! I am having my lemon meringue ice cream right now and had some Fage peanutbutter dip and apple slices for breakfat. I dont know what I would do without you!

Question- what is that website you have thrown out before that we can throw all the nutrition info into and figure out the results per serving?

Hey Deb, Glad you are enjoying the recipes. I use fitday.com when I want to figure out the nut info... I go to a clean day add all the individual ingredients and divide the totals by the # of servings I get.

Hi Michelle, I knew I was just going to love it here. My daughter's name is Michele (one el:) and we always called her Shelly when she was little. I wish she never out grew the nickname...Anyway, I happened to stumble upon this post while preparing for National Cheese Pizza Day tomorrow.
