Tortilla Pizzas are a great way to use up leftovers. Meats, veggies, fruit, just about anything can become a yummy pizza.

How to make them: Preheat oven to 375 degrees. I put 1 drop literally of olive oil on the cookie sheet and spread it around. Place tortilla on cookie sheet. Spread the sauce on the tortilla (pesto, marinara, alfredo, bruschetta sauce, whatever.) Put a slice of cheese on top of that and then any combination of toppings or leftovers I can find bumping around the fridge. Sprinkle with grated parmesan if desired. Pop in oven. 10 minutes exactly. Have the oven hot before you do the toppings **Do not let them sit. Pop them in the oven right away or the toppings will make the tortilla soggy versus the yummy crispy porn pictured above.

Just wondering what you would charge me if I were rich enough to hire you to come and cook for me!? I'm always amazed at what you come up with! I am one of those people in love with the concept of cooking, but don't put it into practice!! But I have to say, between buying new clothes and buying the cool gadgets and food you tell us about, I'm going broke and will have to just cook for myself!! I have the ice cream maker and Torani syrups coming and just got my Max protein! Thanks for all your great tips..and if you're ever in Minnesota, please STOP BY!!

I love your tortilla pizza ideas. In fact last night while getting ready to watch "Lost", I had the munchies. I almost went to pop a bag of popcorn since I had had a fairly low-carb day, then I said; "Wait! I have leftover barbequed chicken, cheese, sauce and Joseph's whole wheat, flax and oat tortillas!" Next thing you know, yummy tortilla pizza!

The recipes and pics you post help me know that I am making the right decision. I don't have to give up good food to maintain my health.

I love the pizza porn gallery! I'm still working on the "crispy" part - I guess I let it set too long, though I try to work fast! Mine is always soggy. I won't give up, though. I'm no quitter!!

I love your idea however, need to know how to make the crust crunchy? I have baked the Trotilla rap before and then add the ingridients and then again to the oven. Do you o wise magical master have any Idea?

Tip for crispy: Have the oven hot before you do the toppings **Do not let them sit. Pop them in the oven right away or the toppings will make the tortilla soggy. If you have an especially liquidy sauce put the slice of provolone on first... so tortilla, provolone, sauce, toppings, a little more cheese.

I just made one of these wonderful pizza! Mmmmm! I made a bbq chicken version, with bbq veggie protein chicken and sun dried tomatoes!!! Even my roommate said it was good.

Hey, I was wondering if you could include how much a serving is...I had surgery 6 mos ago and am still confused with how much to eat...

Oh, and to all of those who are asking about making it crunchy, I turned the oven up to 400, then turned it down to 375 once the pizza was in...I also sprayed the pan and pizza w/ pam...CRISPY!
