WLS Friendly St. Patrick's Day

Top of the Mornin' to ya! Hope everyone has the luck of the Irish today. I have felt lucky every day since having weight loss surgery for my second chance. I'm celebrating this St. Patrick's Day with this Weight Loss Surgery Friendly menu.

Starting my day with Shelly's Shamrock Protein Shake...

and this is lunch...

Shelly's Corned Beef & Cabbage Bites

1/2 Yellow Onion, diced
1/2 cup Corned Beef leftovers, chopped fine
1/2 cup Cabbage leftovers, chopped fine
5 eggs
1/2 teaspoon Kosher Salt
a few twists of Black Pepper

Preheat oven to 350. Saute onion till golden. Set aside to cool. When onions are cool mix all ingredients together. Spoon into a lightly greased (Pam works great) mini muffin tin.

Bake for 30 minutes at 350. Makes 24.

Shelly, I love your recipes! How many of those Mini Egg Bites would you eat in a sitting for lunch?

Thank Trish. At 4 1/2 years out I'm going to have 3 today and a scoop of leftover cabbage but you know depends on your plan, stage so I never put portions (up to you & your medical posse)

Thank you for your inspiration and for helping me get my head back on straight. I'm 2.5 years post op and finally decided to "eat like Shelly" because I don't ever want to go back to my life before WLS.
I don't feel deprived and it's been easier than I thought it would! I feel great and just can't say enough how much I appreciate you sharing your life & recipes with everyone. Thanks for being there for all of us! :)
