A bout of insomnia was the perfect opportunity to try a couple of new flavors of my 5 minute cake I've replicated most of the "traditional" cake flavors so it was time to get a little funky. These turned out great and besides being pretty they taste yummy which is the most important part.
If you have whippersnappers you have to make these with them. I love making 5 minute cakes with kids because they just think it's magic and that I'm super cool and being cool in the eyes of a child is the BEST kind of cool.
Shelly's Pretty in Pink Strawberry 5 Minute Protein Cake
1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix
1 teaspoon Sugar Free Strawberry Jello Powder, dry
1 scoop Vanilla Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug
In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil and combine thoroughly. In a separate bowl, mix pancake mix, Jello powder, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes (my microwave is getting old and needs 20 seconds added now.) Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.
Allow to cool. Slice & serve with a squirt of No Sugar Added Homemade Whipped Cream & drizzle of Smucker's Sugar Free Strawberry Topping if desired.
Shelly's Orange Creamsicle 5 Minute Protein Cake
1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix
1 teaspoon Sugar Free Orange Jello Powder, dry
1 scoop Vanilla Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug

I am soooo tempted to run out and get some Sugar Free Lime Jello because you know I NEED to make a psychedelic green cake. I guess I'll wait till the sun comes up.

My total goober status was solidified when I ran out to the store (needing nothing else) just for Sugar Free Lime Jello to make a green version of this morning's 5 minute cake.
But come on... GREEN!

You can also turn any of my protein cake recipes into 12 mini muffins. Just pour batter in a non-stick sprayed, mini muffin tin and bake at 350 degrees for 10-12 minutes (till toothpick comes out clean)
