Breakfast: The cherries were great this weekend at the Farmers' Market. I picked up a couple of pounds. The pitting them is the pain but worth the work, half have been frozen for future protein shakes and half are being turned into yummy breakfasts this week.
This morning a few became this delicious Cherry & Raspberry Cannoli Parfait: 1/4 cup Ricotta Cheese sweetened with a pump or 2 of Sugar Free Torani Syrup (I used 1 pump SF Vanilla and 1 pump SF Almond), a few Raspberries, a few Cherries and I topped it with a squirt of No Sugar Added Homemade Whipped Cream. This was a great way to start the day.

I bought a basket of little grape tomatoes at the market this weekend. I thought I might make a bean salad with them but we've popped a few too many in our mouth. They looked so pretty on the counter in my new bowl. I love these commemorative bowls Pyrex issued for their 100 year anniversary...
I bought the set and justified my purchased by purging my kitchen cabinet of plastic containers. I was always trying to find a matching lid. I'd pull one out and they'd all fall out... it drove me batty. I tossed all but a few out and replaced them with these cute bowls. They make me smile.

Lunch: I filled the bento box and set up shop on the patio, did some work on the computer, ate and then decided I would rake and pull weeds. I think I overdid it because my arms are now jelly. I could barely lift my fork to my mouth at dinner. I need to beat up my BOB (Body Opponent Bag) more, build my upper body strength. I haven't been angry enough.

Dinner: I made my Ricotta and Sausage Stuffed Spaghetti Squash. I usually cook the squash, scrape it out, make the filling and stuff it back into the hollowed out squash to bake.
This time I just dumped it all into a casserole dish. It's not as fancy or pretty but it has the same great taste. Same bake time as the original recipe.
Snacks: Too much coffee and it's National Devil's Food Cake Day and I'm celebrating as I type. I'm not really sure what's the difference between Devil's Food Cake and just a regular old Chocolate Cake really but I made a batch of Mini Chocolate Protein Muffins actually they are Chocolate Cherry. I dropped one cherry in the center of each muffin.
Two are my dessert tonight. Nom nom nom. They are great to toss in a snack sized Ziploc baggie bring them along when you are going to coffee. When everyone is having something from the bakery case you'll have something too. Speaking of coffee... have you seen that video of the Starbuck's employee going off on a customer. I'm worried about the world. We are way too high strung and quick to go from zero to 100 emotionally, incidents like this one, road rage, shootings. Big plug for meditation. It has helped me learn to chill. I used to be a bit of a hot head in my younger years (1/2 Sicilian and born & raised New Yorker both known for their umm passion) but meditation has helped... well that or I'm just getting old ;)
