It'll be a beautiful star on a brunch buffet. Mom will be super impressed...or Dad's you might consider this one for breakfast in bed. It's super easy for you and the kiddos to make together and Mom will love that you didn't use every pan and utensil in the kitchen to make it.
1 - 6 oz. container Fresh Raspberries
For the batter:
2 Eggs
3/4 cup Almond Breeze Almondmilk Hint of Honey Vanilla
1/4 cup Cottage Cheese
1/2 cup Multigrain Pancake Mix
1/4 cup Vanilla Whey Protein Powder
1/4 cup Sugar Free Vanilla Syrup (found in the coffee aisle)
Arrange raspberries evenly in a baking dish or deep pie plate (any size around 8x8x2 would work) that has been sprayed with non-stick spray.
Whiz the batter ingredients in a blender till smooth. Pour batter over top of the berries.
Bake at 425 for about 25 minutes or until puffed and lightly golden brown. I cut it into 8 pieces but it you have more on a buffet you could even do 16 squares.
Serve hot or room temperature (a great brunch buffet item because it can sit a bit) with a drizzle of warmed sugar free maple syrup or topped with a dollop of Greek yogurt.
I used Almond Breeze Almondmilk Hint of Honey Vanilla in this recipe which added less than 60 calories to the whole dish, a much healthier choice than the heavy cream traditionally used in Clafoutis.
