Chicken Bella

The Feast of San Gennaro is this weekend in NYC. San Gennaro is the Patron Saint of Naples, if you've seen Godfather Part II the feast of San Gennaro is the feast that is going on when the young Vito whacks the local Mafia Don Fanucci in the hallway of his apartment. Yep whacked him at a religious festival. I'm thinking he had a lot of Hail Mary's to say at confession that week ;)

Would love to be in Little Italy with the smell of sausage & peppers and listening to the Italian music but I'll make sure even 3000 miles away I'll get my Italian fix with dishes like these.

Last night's dinner...

Shelly's Chicken Bella

2 Boneless, Skinless Chicken Breasts, sliced into 3-4 pieces each and pounded flat
Italian Seasoning
Olive Oil
1 Maui Onion, sliced
3 Green Onions, diced
6 White Mushrooms, sliced
1 Portobello Mushroom, sliced
3 cloves Garlic, diced
1/2 cup Storebought Alfredo Sauce
1/2 cup Chopped Canned Tomatoes, drained (Italian Style)
2 Tablespoons Parmesan, grated
1/2 cup Mozzarella, shredded

Pound chicken breast pieces flat between plastic wrap. Brush with olive oil and sprinkle with Italian seasoning. BBQ till done. Set aside. Saute onions and mushrooms till golden. Add garlic saute 1 minute more. Set aside. Mix Alfredo sauce and tomatoes together. Spoon 1/3 into a Pyrex casserole dish. Arrange chicken on top.

Spoon second 1/3 of sauce on top. Spoon onions & mushroom mixture over chicken and top with remaining sauce and cheeses.

Bake at 350 for 30 minutes.

and for dessert (cranked this out in about 8 minutes)...

An Espresso Trifle made by layering yummy Espresso Protein Pudding and Espresso 5 Minute Protein Cake. Yum!

Love your blog, I read every day. Loved your post today about San Gen. Festival we are going into the city this weekend for it. I saw on your wish list that you have your eye on a Coach bag, I have that bag (only solid leather beige) sitting in the bottom of my closet (I carried it twice it is too small for me) would you like it? It seems silly for it to just sit in the bag in the bottom of my closet when there is someone out there who would like it.

Heather, You are so sweet. Thank you. I actually treated myself. It was my gift when I hit -100 pounds used to treat myself with food and of course that is out so I got myself a purse. Thank you so much though. I hope you have a wonderful time in NY!! Enjoy some sausage & peppers oooh or some beef briacole.

I need to ask what brand of alfredo sauce you use. The kind I have bought smells (and somewhat tastes) like feet! Ugh!!

You know any will work the jarred ones all are a little odd (stabilizers, etc.) but when you add tomatoes, juices from the onions & mushrooms mix in you can't even tell it was Alfredo (I swear) I'd never eat the jarred Alfredo on it's own but with stuff added. A different experience. This time it was Buitoni I used (refrigerator section)

Shelly - this recipe sounds delish! Question put 1/3 of sauce on bottom and 1/3 of sauce on top of onion/shrooms....where did the remaining 1/3rd go???
