Chocolate Monkey Pancakes

OK Mom's this one is for you...

This weekend make these for you and your kids. You will be the hit of the neighborhood... "My Mom is so cool she makes me Chocolate Monkey Pancakes!"

They seriously rock and since they are weight loss surgery friendly you may find yourself fighting over the last one.

Shelly's Chocolate Cottage Cheese Pancakes with Sliced Banana (aka Chocolate Monkey Pancakes)

1/2 cup Cottage Cheese (I use pre-mixed cottage cheese with pineapple)
1 Egg
3 Tablespoons Whole Wheat Flour (I use Arrowhead Mills Multigrain Pancake Mix)
1 Tablespoon Sugar Free Chocolate Pudding Mix, dry
Banana, sliced

Whiz in mini food processor. Spray pan with non-stick spray. Cook on low till bubbles appear, flip. Cook till done. Serve topped with a sliced Banana and SF Maple Syrup (I use Cary's). Makes 4 small pancakes (pictured) or 8 silver dollar size.

These are very tender pancakes so smaller is better for flipping. They won't get any style points but they taste yummy.

Shelley, I have been drooling over your new pancake creations! A question or two for you...since I can't consume Aspartame (migraine connection)it rules out all recipes with sf Jello brand puddings. Have you tried the Sans Sucre line of sf puddings? They are all mousse-style but use Splenda. Do you think I could substitute them for the Jello pudding mix?

Michelle. I must know about the texture. I am picky, and my kids are - and if I am going to make any of these... I have to know - do they resemble pancakes, REALLY? REALLY?

Beth, They aren't Denny's softer than regular pancakes. Crepe like in taste. Try them I think you'll be surprised. What's the worse that can happen you have a doggie right... ;) Hope you enjoy them.

Beth, I was worried about the texture too...but these are seriously awesome. They are not soft super carby pancakes...more like thick crepes, but crispy around the edges (at least how I cooked 'em!) I used the same pancake mix Michelle stated and they turned out excellent. Topped with a bit of banana and SF syrup...YUMMMMM
