Going to take my first post-op real shower today. Currently trying to psyche myself up. I've been sponge bathing it and it's just not cutting it for me any longer so wish me luck. I'm sure I will be wiped and requiring a happy pill afterwards so I experimented this morning with this casserole so dinner would be an easy reheat tonight. Hope you enjoy it!
Shelly's Creamy Chicken Florentine Casserole
1 cup Chicken, boneless, skinless breasts diced 1" cubes
1 yellow Onion, diced
3 green Onions, diced
4-5 fresh Mushrooms, sliced
2 cloves Garlic, diced
1/8 teaspoon Marjoram
1/2 teaspoon Oregano
1 Tablespoon Fresh Basil, chopped
1 teaspoon Kosher Salt
a few twists of Black Pepper
1 - 13.75 oz can Artichoke Hearts, non marinated, diced
1 cup cooked Spinach, drained and chopped
1 cup Alfredo Sauce (I used jarred Bertolli)
1 - 14.5 oz can Italian diced Tomatoes
1 cup Shredded Italian 4 Cheese Blend
2 Tablespoons Italian Style Dry Breadcrumbs
Oil/butter for sauteing
Saute chicken till golden. Saute onions and mushrooms till golden. Add garlic and dry seasonings and cook 1 minute. Add spinach, basil and artichoke hearts. Add sauce, tomatoes, cheese and chicken stirring to combine. Pour into a Pyrex casserole dish. Top with bread crumbs. Bake at 350 degrees for 25-30 minutes until golden.
Oh I also wanted to update everyone on my kitty Rose (Prescott's Mom) and my only remaining furbaby. My pal Tara asked me about her this morning. Thank you. Well it was a tough few weeks on her. She was pacing and looking for Pressy for a few days (broke my heart) and then I took off and went to Mexico for surgery for 4 days (My mom was with her but still).
She's doing OK. She is doing some odd things. She has become extremely talkative. Anyone speak kitty? She's rambling on about something. She's really cuddly way more than before. She was always a cat that would enjoy love for a few minutes then take off... like OK I'm through with this. She'll stay forever now. Oh and she carries around a stuffed gray kitty in her mouth and drops it at our feet. She did this every once and awhile through the years but now it's a every night thing. We say thank you and give her love. It's her new ritual before bed.
Highlights of the day:
* I'm less swollen today and the bruising is going away (purple is turning yellowish)
* When the pain meds kick in ;)
* It's a beautiful day in the neighborhood.
