National Peanut Butter Lover's Month

November is National Peanut Butter Lover's Month. Here are some of my favorite weight loss surgery friendly ways to celebrate.

Regular Peanut Butter is high in fat and should be consumed in moderation. Powdered Peanut Butter is a nice alternative... all the peanut taste & protein but waaaay lower in fat (brands: PB2 Chike PBFit, etc. watch added sugars)

Weight Loss Surgery Bariatric Recipes Gastric Bypass Vertical Sleeve MenusShelly's Peanut Butter Protein Mini Muffins

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
1 Tablespoon Canola Oil
3 Tablespoons Multigrain Pancake Mix
2 Tablespoons Powdered Peanut Butter (aka Peanut Flour)
1 scoop Vanilla Protein Powder
Pinch salt
Optional: SF Strawberry or Grape Jelly

Mix egg, milk, syrup and oil and combine thoroughly. In a separate bowl, mix pancake mix, peanut flour, protein powder and salt. Tip dry into wet and stir till combined. Pour batter into a non stick mini muffin pan that has been sprayed with Pam.

Bake at 350 for 8-10 minutes until knife comes out clean.

Sugarfree Sugar Free DessertsSlice open and serve with a smear of SF Jelly. Soooo good.

These make a great on-the-go breakfast or I take a couple in a snack sized Ziploc baggie and bring them whenever I go for coffee... while my friends are getting something full of calories, fat, sugar and carbs from the bakery case I get to enjoy too.

Shelly's Chocolate Peanut Butter Banana (aka "Chocolate Monkey") Protein Shake

8 oz. Vanilla Soy Milk (or Milk/Water Combo)
1 scoop of Chocolate Protein Powder
2 Tablespoons Sugar Free Vanilla Torani Syrup
1/2 a Banana
1-2 Tablespoons Powdered Peanut Butter (aka Peanut Flour)
a couple of Ice Cubes
Optional topping: No Sugar Added Homemade Whipped Cream

Whiz in blender till smooth. Top with No Sugar Added Homemade Whipped Cream, optional.

I am sure I will have a hard time finding the flour over here, but maybe I can subsittute it with a bit of low fat PB. For now, on my 10 day liquid diet before surgery, I guess these recipes are still FAR away, but it always gives me courage and gusot to go ahead with it, just looking at your recipes and how you make it FUN to eat wls-friendly

Trying to figure out what went wrong with the peanut butter muffins. First of all I didn't have enough batter to put in the full pan (used the same size as in the picture) I put 3 tablespoons of batter in each cup. Ended up making a 2nd batch to fill the muffin pan. Also, they came out very dry. Very peanut buttery but dry. Any ideas? I went over and over the recipe.

If you used all the same ingredients... maybe check your egg size... I use Large Grade A in all my baking. Though not having enough to fill tins sounds like something left out? Try 'em again worth the test batch :) Put the first batch in some SF Pudding.

Never been fan of protein powder muffins, but these looked too easy not to try. They're still a bit dry for me, but with the addition of the SF jelly, they are truly awesome - this one is a keeper. I used PB2 and they turned out great.

I do NOT recommend the SF Torani Peanut Butter syrup. I think it's gross, but there may be others out there who like it. It's the only flavor of theirs that I do not enjoy.

For the shake definitely. For the muffins... the recipe was testing with my protein SEI Max (aka SEI Ultimate) Vanilla... others I have tried have worked but I've never used that particular brand in light, you'll just have to make a test batch. Good Luck!

P.S. SEI protein is really good. You should try & find it if you can.
