Tropical Shrimp Cocktail

It was absolutely beautiful yesterday. The most intense blue sky I have ever seen. Not a cloud in sight. A dinner outside on the patio was a given. I just wanted to enjoy every last minute of that sky.

Enjoy the little things, for one day you may look back and realize they were the big things.

Last night's dinner...

Shelly's Tropical Shrimp Cocktail

1 pound Large Cooked Shrimp (21/25 count), peeled, deveined, tails off
1 Avocado, diced
1/2 cup Papaya Mango Salsa (I used Trader Joe's fresh)
1/2 cup Mild Tomato Salsa
dash of Kosher Salt

Toss all ingredients together and spoon into margarita glasses.

That looks soooo good. I just had the VSG last monday so I am going to have to wait on that. But, I am going to make it!!

I made this salad last night for todays lunch...I just had to tell you it is fantastic!! Thanks so much for sharing your great recipes!
We unfortunately don't have a Trader Joe's(don't you feel sorry for us??), so I used the mango salsa from Costco. Thanks again!
