Grilled Corn and Black Bean Salad

This is a super yummy salad. Fresh sweet corn grilled on the BBQ is one of my favorite things about the summer. The cherry tomatoes are from my garden. It was a very good tomato year. I also used some of those super sweet yellow grape tomatoes I bought Saturday at the Farmer's Market.


Shelly's Grilled Corn and Black Bean Salad

1 can (15 oz.) Black Beans, rinsed and drained
3 ears of Corn, grilled on the BBQ, kernels removed from cob
1 (4 oz.) jar Pimentos, drained
1 cup Tomatoes (I used cherry and grape tomatoes, cut in half)
2 Tablespoons store bought Balsamic Dressing
a squirt of fresh Lime Juice
1/2 teaspoon Seasoning Salt (a garlic paprika onion salt blend)
a few twists of Black Pepper

Mix everything together. Refrigerate.

This was such a light and refreshing meal. It was a great side dish last night with BBQ'd steak but you could also make it a main dish by adding: grilled chicken, steak, shrimp, smoked tuna, canned tuna, salmon, crab or some cheese to boost the protein.

Here's the leftovers from last night's dinner turned into today's lunch...

I took the leftover steak, sliced it and made a Pesto, Steak & Cheese Tortilla Pizza and served it with a scoop of the leftover salad.

Highlights of the day:

* I ran into friend I haven't seen in a while. She last saw me at about Size 18 and these 6's are getting very loose. She literally grabbed my waist and screamed. LOL. It was a nice ego boost ;) These moments get less and less as you get further along so enjoy them while you can.

* We're having "Breakfast for Dinner" tonight. In the morning there is never enough time to do breakfast justice. So once and awhile I like to have it for dinner. I'm going to make some Italian-style scrambled eggs with pesto, tomatoes, fresh spinach, and ricotta and cook some bacon. Yum!

Speaking of breakfast...

* Starbuck's has decided to keep breakfast. This is good news because it makes grabbing food while I'm traveling so much easier. I heart those whole wheat egg, spinach, & feta wraps. A half of one of those and a latte and I'm set. They are apparently going to make less stinky versions (less butter, different cheese) so they don't interfere with the coffee aroma. Whatever... they better taste good.

The WOW moments from people I haven't seen in a while are very encouraging and make me feel "Simply Irrisistable."

I made this salad tonight, so yummy and I processed the leftovers into a yummy dip can't wait to eat it tomorrow. Thanks for the GREAT idea!
