Weekend Fun

Had a great day yesterday. Started out at the Farmer's Market of course. Scored some AWESOME deals. Patty Pan Squash, Zucchini, Onions, Cauliflower, Apples, Nectarines, Strawberries, Cherry Tomatoes, Cucumbers.

It was Quilt Show weekend. The local businesses on Front Street in Old Town display quilts all along the banisters and storefronts. It's an annual thing. I took so many pictures but here's a few of my favorites...


Then it was off to the Greek Festival for lunch. I was pleasantly surprised at all the yummy weight loss surgery friendly choices: souvlaki, gyros, chicken kabobs, Greek salad with feta. Had them ax the pita & rice and double the salad. Tons of yummy protein. A little Greek music and dancing. Opa! Lots of fun.

Came home and made dinner... this yummy casserole with my Farmer's Market cauliflower. It was very mac and cheese-ish with out the useless white carb macaroni. Soooo good.


Shelly's Cheesy Cauliflower Mushroom Casserole

1 head Cauliflower, parboiled
1 Maui Onion, diced
3 Green Onions, diced
2 cloves Garlic, diced
4 White Mushrooms, sliced
1 Portabello Mushroom, sliced
4 slices of bacon, cooked & crumbled
1 Tablespoon Butter
1 Tablespoon Spelt Flour
1 cup Milk
1/2 cup Sharp Cheddar Cheese, shredded
2 Tablespoon Parmesan

Parboil cauliflower florets (boil till tender but not quite done.) Drain. Set aside. Saute onions and mushrooms till golden. Add garlic saute 1 minute more. Add drained cauliflower florets. Mix till combined. Set aside.

Meanwhile melt butter & spelt flour together. Cook for 1 minute. Add milk slowly and stir constantly. When milk bubbles. Add cheddar and crumbled bacon. Cook and stir till cheese melts. Pour cheese sauce over veggies and mix till coated. Pour into Pyrex casserole dish. Sprinkle with Parmesan and bake at 350 for 30 minutes till bubbly and golden.


Really felt like Fall this weekend. Cool, breezy, great walking weather. My favorite time of the year.

Small pleasure #1: Made Banana Splits tonight for my Mum and I...

Shelly's Protein Ice Cream Banana Split

1/2 a Banana
1 scoop of Protein Ice Cream
a squirt of Land o Lakes Sugar Free Whipped Cream
a drizzle of Smucker's SF Chocolate & Caramel Sauce
2 Walnuts & 2 Pecans, chopped

Small pleasure #2: I took a super long walk this afternoon. The sky was beautiful bright blue and filled with little cotton ball clouds. Wanna see?

Tidbits

I heart impromptu "Tidbit Parties" or "Carpet Picnics." A few yummy weight loss surgery friendly snacks + good friends and/or family = the perfect evening.

This evening the snacks were a few of my Bites (crustless quiches), a few tasty cheeses (not pictured) and this yummy spread...


Shelly's White Bean Artichoke Spread

1/2 a (14 oz.) can of Artichoke Hearts, water packed, drained
1/2 a (15 oz.) can Cannelini Beans, rinsed and drained
1/2 teaspoon Italian Seasoning
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
2 Tablespoons Storebought Pesto Sauce
1 Tablespoon Parmesan Cheese, grated

In a mini food processor whiz artichokes, beans, seasoning, salt & pepper till smooth.

Add pesto and whiz till evenly combined. Spoon into ramekin or mini casserole dish. Top with Parmesan and bake at 350 for 25 minutes.

Serve with veggie dippers (cucumber slices, celery, carrots, bell pepper spears, jicama, tomatoes) and soy crisps. I ate this a lot during pureed phase on it's own.

I've got an hour till my shows come on... I started watching that new series FastForward. The first episode last week was heart pumping and of course it's Thursday so it's Grey's Anatomy. I sound like a TV addict but I really don't watch that much... 4 hours a week. Hardly worth that $90 a month DirectTV bill. Grrr. My favorite show is The Amazing Race (Sunday's CBS 8 PM) and I love love love Glee (Wednesdays 9 PM on FOX) The first episode they played two Journey songs... 2 in the same episode. I was sold. So there's my four hours oh and through osmosis I know what is happening at all times on General Hospital. My Mum loves GH so I get the 411 on Sonny, Luke and the gang in Port Charles whether I want to or not ;)
