I try to do a couple of meatless or vegetarian meals each week. A lot of people take part in Meatless Monday, an organized effort designed to help people reduce the consumption of meat and saturated fat. My meat free days don't really have to do with reducing fat they are more about just having variety and balance in my diet and they don't always end up on a Monday but this dinner did. So winner winner Meatless Monday dinner.
I've experimented with bean patties before but this one was by far the best...
Shelly's Chick Pea Fritters
1 Yellow Onion, diced
2 Green Onions, diced
1 (15 oz.) can Chickpeas (Garbanzos), rinsed & drained
Contents of 1 head of Roasted Garlic (How to Roast Garlic)
1 Egg, beaten
1/4 cup Parmesan Cheese, grated
2 Tablespoons Multigrain Pancake Mix
1/2 teaspoon Kosher Salt
1/4 teaspoon Greek Seasoning (in spice aisle)
a few twists of Black Pepper
Saute onions till golden. Add garlic and chickpeas and cook a few minutes till chickpeas are slightly golden. Set aside to cool.
Add all ingredients to a mini food processor and pulse till chopped fine but not pureed.
Using an ice cream scoop or a 1/4 cup measure form into patties. Slightly press down. Place in a non-stick pan that has been sprayed with Pam. Cook on low to medium heat till browned on one side about 5 minutes. Flip, pat down slightly and cook till browned on other side about 5 minutes.
I served it with a Cucumber Salad. Tossed with a dollop of Greek Yogurt, sort of Tzatziki-ish.
