This was a super delicious and super quick lunch. Waaaay better than something from the "Panda Place" where the food sits around on the steam tables under heat lamps till you order it. Less than 20 minutes from start to finish. Take that Rachael Ray.
Shelly's Quick Sesame Beef Stir Fry
1/4 lb. (about 4 slices) Cold Cut Roast Beef, sliced into strips
1 Maui Onion, sliced
1 Yellow Bell Pepper, sliced
2 cloves Garlic, crushed
1/2 bag Trader Joe's Thai Style Soy Ginger Carrots*
1 Tablespoon Soy Sauce
1 teaspoon Sesame Seeds
Nuke carrot blend for 3 minutes and set aside. Meanwhile saute onions and bell pepper till golden. Add garlic, carrot blend, soy sauce and sliced beef. Toss together and cook covered till everything is warmed through. Just before serving sprinkle in sesame seeds.
*If you don't have a Trader Joe's near you you can recreate the Thai Style Soy Ginger Carrots with any Asian-style frozen veggie carrot blend, a tablespoon of minced ginger, a few splashes of soy sauce and balsamic vinegar, parsley and some sliced almonds.
Speaking of Pandas... not sure if I mentioned it on the blog yet but the San Diego Zoo has a new baby panda (2 months now) and oh my gosh I could watch it all day. If you have whippersnappers in your life you gotta show them. Soooo cute!
