I've experimented with bean patties before but this one was by far the best...
1 Yellow Onion, diced
2 Green Onions, diced
1 (15 oz.) can Chickpeas (Garbanzos), rinsed & drained
Contents of 1 head of Roasted Garlic (How to Roast Garlic)
1 Egg, beaten
1/4 cup Parmesan Cheese, grated
2 Tablespoons Multigrain Pancake Mix
1/2 teaspoon Kosher Salt
1/4 teaspoon Greek Seasoning (in spice aisle)
a few twists of Black Pepper
Saute onions till golden. Add garlic and chickpeas and cook a few minutes till chickpeas are slightly golden. Set aside to cool.

Ooh, I'll have to add another can of chick peas to the grocery list (to complement the 2 I buy every week to roast... love me some crispy, salty roasted chick pea goodness! This recipe looks and sounds divine!

Thanks for the idea. I made these this weekend and they were FABULOUS. I varied them by trying PAM, Wesson oil, and butter for cooking. Pam is the best because it stayed truer to the flavor. Frying in butter gave a crispier outer layer and a bit more crunch and people thought they were tastier, but you looks a lot of the flavor from the ingredients.
