Greek Three Bean Salad

I love bean salads. They are great to have in the fridge when you want a quick side dish or a yummy protein packed snack. They travel well so perfect for hauling to the park or beach and since there is no mayo, no risk of spoilage.


Shelly's Greek Three Bean Salad

1 (15 oz.) can Chick Peas, rinsed & drained
1 cup Cooked Lentils (love those Trader Joe's pre-cooked ones)
1/2 cup storebought Giant Greek Beans (marinated item found on olive/salad bars)
1/4 cup Feta Cheese, crumbled
1/4 of a Red Onion, diced fine
1 Cucumber, chopped
1/2 teaspoon Oregano
1 Tablespoon Fresh Basil, chopped
squeeze of Fresh Lemon Juice

Mix all ingredients together and chill. Make several hours ahead so the flavors get a chance to love on one another.
