Last night's salad...
Shelly's Santa Fe Turkey Salad
1/4 of a Yellow Onion, diced
2 Mild Green Chili Peppers, diced
2 slices of Turkey Deli Meat, chopped
Diced Avocado
Lettuce (I used a mix of baby greens)
Monterey Jack, shredded (you could use Pepper Jack too)
a few twists of Black Pepper
Storebought Balsamic Vinaigrette
Saute onion till golden. Add turkey and peppers and saute a few minutes more. Top greens with remaining ingredients and turkey mixture (cooled slightly.)

Shelly's 5 Minute Sugar Free Black Forest Cake
1 Egg, beaten
3 Tablespoons Milk (I used Vanilla Soy)
2 Tablespoons Sugar Free Torani Syrup (I used SF Black Cherry)
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix (I use this)
2 Tablespoons Cocoa
1 scoop Chocolate Protein Powder
Pinch salt
1 Measuring Cup or Microwave Safe Mug
In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil and combine thoroughly. In a separate bowl, mix pancake mix, cocoa, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.
* I ran out of the pudding mix I have been putting in the other versions of this chocolate cake so I just left it out and bumped up the cocoa to 2 Tablespoons. I wanted to see what it would be like without it. It was great. I think I will be leaving the pudding mix out from now on. The taste was not compromised and it will be a few less calories. So hey can't beat that.
Highlights of the weekend:
* Wasn't quite the weekend I had planned ;) but it was awesome nonetheless. Great friends, family time, gorgeous weather, the beach, a scary movie, the Farmer's Market, crazy cooking experiments, meaningful conversations, LA preparations and oodles of coffee.
* Finally caught up on Amazing Race episodes. Are you watching this season? I love that show. It makes me long to travel. What I love is that I've never thought about going to some of the locations they visit until seeing them on the show.
* Got a hold of a microwave so there will be chocolate cake in LA. Are you going? There is still time. Can't wait to see everyone! Safe travels.

i Michelle, this cake sounds yummy. I am gonna have to invest in some of the sf syrups. The only one I have is the toasted marshmallow, and it's "ok". Hey, what beach and Farmer's Market do you go to??
More cake ideas from my test lab:
Pumpkin Spice Cake-- I replaced the oil with 1/4 cup pumpkin puree, pumpkin pie spice(was dry, you might want to keep a little oil) added a couple pkts of Splenda--added a tbsp of cut-up mixed raisins and goji berries and a tbsp of crushed almonds... and iced with 1 oz ff cream cheese/splash of DaVinci Vanilla. Topped with cinnamon. Niiiiice.
Also for the black forest version: Comstock makes a very low cal cherry pie filling. Ice with the cream cheese frosting and a dollop of the cherries-- nom nom nom.
Still afraid of these concoctions, can't wait to burn the hotel down with ya.
I know the cakes are to die for, but I have been eating salads for the last year and I still am craving different tasting salads. This one sounds yummy. Thansk for creating and sharing.
Chocolate cake was really good! I am trying to think of things to frost it with instead of just cool whip. Any good ideas? I can't wait until I can make and eat some of those tortilla pizzas without puking!!! My new little stomach is so touchy, sometimes I can't stand it. Oh well, it's only been 2 months. I do look forward to making a lot of these recipes, though. Thanks again!
I finally tried the choc cake - used your suggestion of melted peanut butter - so yummy! I can't believe I get to eat cake! I haven't had it for over 3 years since before my surgery. Thank you for bringing cake back to me! Fortunately, I can only eat a small amount! Thanks for all the varieties... I'm not that creative! You must have a ton of different SF varieties.. and I thought I had a lot with 10! Keep up the great work! I'm a fan!

I thought I'd play around with it...
I used a protein pancake mix and protein powder, and instead of milk I used Greek Yogurt (because I didn't have any milk) and also reduced the oil.
I gotta say, it ended up more like a thick chocolate bread - but not too shabby, either!! Definitely gonna work with it some moere!
Okay, so I finally tore myself away from the peach/almond cake to make this one and it went horribly wrong. What kind of "cocoa" are you talking about? When I read "cocoa", I assumed it meant cocoa powder. Do you mean like...hot cocoa powder? I had to throw it away. Also, am I doing something else wrong that's making them come out so dense? They're VERY tasty, but the bottom of the cake is like a dense custard, the middle is a little better, and the top actually has a cake consistency...I even threw out my pancake mix and bought a new one thinking that maybe the baking powder got stale. I use the same TJ's multigrain that you do.
Well I'm not sure. I use a different multigrain pancake mix not Trader Joes's it's Arrowhead Mills. Could be a drier mix? The cocoa is unsweetened cocoa (like Ghiradellis or Hershey's) it sounds like something got left out maybe? or the microwave isn't on high. Shouldn't take more than 2:40tops to cook. This one is one of my favs. I'd give it another try ;)
