Today in my post weight loss surgery eating...

Breakfast: A dollop of Greek Yogurt (sweetened with Sugar Free Caramel Torani Syrup), 1/4 of a sliced banana, and a sprinkle of toasted almonds.

It was muggy and I ended up coming in pretty quick. Then I saw that the winner of the Eggface Summer Sample Giveaway had emailed her mailing info and I decided to get the package off to her today. So I took off to run some errands and drop the package at the post office.

Dinner: It finally cooled down and I decided to BBQ some of the zucchini I bought at the Farmer's Market this weekend. It was smaller than I remembered so I cut it into medallions/rounds, a swipe of olive oil and a sprinkle of Greek seasoning (blend found in the spice aisle.)


I tossed the cooked zucchini rounds with drained, marinated mozzarella balls (halved) and halved cherry tomatoes (also from the market.) It was delicious! Will definitely make this again. It was a perfect Meatless Monday meal and I think it was quite pretty with the green, white and red, like the Italian flag. We ate it as is but it would be a great side with grilled chicken or shrimp.

Snacks: It was super hot and muggy here. When I came home from running all my errands I made this ode to Team USA Protein Shake to cool off. Are you watching the Olympics? I hate that they are so delayed. I see the results on twitter and it kills the excitement.

Shelly's Go Team USA Protein Shake

8 oz. Milk (any kind)
1 packet of Celebrate Vitamins Vanilla Cake Batter ENS
2 Strawberries
10 or so Blueberries
2 Tablespoons Sugar Free Strawberry Torani Syrup
a few Ice cubes

Whiz in blender till smooth. Top with optional squirt of homemade Sugar Free Strawberry Whipped Cream.

Shelly's Homemade No Sugar Added Strawberry Whipped Cream

1 cup Whipping Cream
1 Tablespoon Sugar Free Strawberry Torani Syrup (any flavor will do)

Whisk till well combined. Fill whipping cream to the fill line of the whipper. Screw on the top. Insert the CO2 cartridge till it empties, unscrew that. Put the nozzle on, shake a few times and squirt away. It makes a ton, store it in the fridge for up to 10 days just give it another few shakes before squirting. Soooo good.

Oh I promised I would share the people pics when I got a hold of them from my brother's visit. Here's my favorite. My bro, my Mum and me.

Banana Split Fruit Dippers

Healthy, protein packed, weight loss surgery friendly, but most importantly, super yummy treat. Perfect for after a BBQ as dessert or an after school snack.


Shelly's Banana Split Fruit Dippers with Chocolate Protein Yogurt Dip

4 oz. Greek Yogurt
2-3 Tablespoons Chocolate Protein Powder (any kind)
1 Tablespoon Sugar Free Torani Syrup (any flavor)
1 teaspoon Unsweetened Ghirardelli Cocoa Powder
1 Tablespoon Toasted Almonds

Mix together all ingredients till well blended. Top with toasted almonds. Use with fruit dippers, make a parfait or eat as is. I made some Banana Split Fruit Dippers. Wooden skewers with Strawberry halves, Banana slices, and Gold Pineapple (in natural juice, drained) chunks. All the flavors you would find on a Banana Split but waaaaaay less calories!

Post Weight Loss Surgery Menus: A day in my pouch

My yesterday in post weight loss surgery eating...

Breakfast: Yogurt Parfait. Make these ahead of time for a super quick grab and go protein packed breakfast. For portability I use a disposable cup and covered with Saran wrap. Don't forget your spoon though. A yummy parfait and no spoon is a sad start to the day.

Lunch: Packed up my bento box and took lunch outside. Seems like I have a never ending to-do list lately and every time I think something is checked off it comes back. It's just one of those weeks. Eating lunch outside this week has been my decompression time.

Dinner: I made pancakes for dinner. I think pancakes are better for dinner because they take a little more time than I am able to give to cooking and cleaning up most AM's. I make lots of versions of protein packed pancakes but this is the one we had last night (a favorite)

Shelly's Butterscotch Crunch Ricotta Pancakes

1/2 cup Ricotta Cheese
1 Tablespoon Sugar Free Butterscotch Instant Pudding Mix, dry
1 Egg
1 Tablespoon Sugar Free Torani Syrup (any flavor SF Vanilla, Caramel, etc.)
3 Tablespoons Multigrain Pancake Mix
1/4 cup Grape Nuts Cereal

Whiz all ingredients (except cereal) in mini food processor. I use whole milk ricotta, if you use part skim, drain first. Spray pan with non-stick spray. Cook on low till golden, top with a sprinkle of Grape Nuts, flip, pat flat, cook till done. Serve each pancake with a drizzle of warm Sugar Free Maple Syrup, SF Jam or Marmalade or Fruit. Makes 4 small pancakes or 8 silver dollar size.

These can be frozen between slices of wax paper or kept in the fridge a day or 2 and reheated (nuke 25 seconds) for breakfast during the week. Surprising good cold too. Leftovers usually get some SF jam, almond or peanut butter smeared on them, wrapped in foil and they become a great breakfast-on-the-go.

Snacks: Too much coffee as usual and on my way home from errands I stopped in Bux and got a Sugar Free Vanilla Soy Latte.

Hope everyone is having a good week. I have to say I have been a little blah this week. The too much to do that I mentioned above and the tragic Colorado shooting news footage put me in a bit of a funk. I think this weekend a trip to the beach might be in order, a little staring out at the crashing waves. Pre-op I might have chosen to make a huge bowl of pasta or a fancy dinner out to feel better. Post weight loss surgery I look for healthier choices.

Eggface on TV

So I'm making my television debut next month. Well technically this will be my second TV stint. Ha. If you count the nano-seconds my Mum and I were on the Glee Season 1 Finale. If you have the DVD set check out the balcony at the 17.19 mark but don't blink you might miss me. This time you will see me, oh you will you see me, probably a bit too much.

I'm going to be appearing on The Ricki Lake Show. Yes, Ricki Lake (Hairspray, China Beach, Dancing with the Stars, Mrs. Winterbourne and my favorite a TV movie she made called Babycakes.) Her new show debuts in September. I can't go into all the details of the episode other than to say that my fellow weight loss peeps will want to tune in. I will share what I can, when I can. Oh I will say this much, I was asked to make a video diary entry for part of the show and be kind when you watch it. Let's just hope they have a great editing staff cause the raw footage I gave them would not garner an Emmy nod.

I'll give you all the details like air date and all when I know it and I will of course take some pics.

A day in my pouch

My yesterday in post weight loss surgery eating...

Breakfast: A wedge of an Herb and Tomato Frittata I made for my Mum. Just fresh herbs (basil, oregano, parsley) and 1 tomato diced and a couple of eggs. Cooked till almost set then finished under the broiler.


Lunch: Leftover Tuna and Lentil Salad and some other goodies I tossed them all in my super cool bento box and head to the park near my house that has free wifi. I worked on computer stuff while I soaked up the Vitamin D rays. I read the other day in Fitness magazine (I think it was a University of Minnesota study or maybe it was Maryland, it was an M state) that people who take in more Vit. D eat less. Something about it boosting the leptin hormone in the brain that signals when you are full. Ha. It must have worked because I took most of my pistachios and my 1/2 a cookie home for later.

Shelly's Tuna & Lentil Salad

1 1/2 cups cooked Lentils
1 Cucumber, chopped
2 Tomatoes, chopped
1 can Tuna Fillets, packed in Olive Oil, drained (I love Ventresca Filets)
1 Tablespoon of some Fruity Vinegar (Citrusy, Lemon, Champagne)
1/2 teaspoon Oregano
Kosher Salt to taste
a few twists of Black Pepper

Combine all ingredients and refrigerate for several hours before serving. I used pre-cooked lentils from Trader Joe's (find in the refrigerator section) but you could just soak dry ones and cook then chill.

Dinner: I had a couple of zucchini that needed using so I sauteed them with some onion, topped it with cheese (Mmmm cheese) and made a sort of bake. It was delicious. This would be a great one for Meatless Monday.


Shelly's Zucchini & Ricotta Bake

1/2 cup Ricotta Cheese
1/4 cup Fresh Mozzarella, chopped
2 medium Zucchini, sliced
1 Yellow Onion, chopped
4 Green Onions, diced
1 teaspoon Oregano, divided use
1 Tablespoon Fresh Basil, chopped, divided use
Salt to taste
a few twists Black Pepper

Mix ricotta, 1/2 teaspoon of oregano and 1/2 the basil together. Add salt and pepper to taste. Set aside. Saute onions and zucchini till golden. Top with dollops of ricotta cheese mixture and sprinkle with fresh mozzarella. Place under the broiler for 4 minutes or until golden and bubbly.

Snacks: A Starbucks Sugar Free Vanilla Soy Latte, the 1/2 Protein Cookie and remaining Pistachios from lunch and some Grapes from the 2 vines I have in the backyard that are crazy full this year. I doubt I'll be able to come up with uses for them before the birds figure out they are back there.

2. A person’s weight provides no indication of an individual’s character, credentials, talents, leadership or contributions to society.

The OAC has released a new educational piece on weight bias titled, “Weight Bias in the Workplace – Information for Employers.” GREAT INFO. Thank you Obesity Action Coalition (OAC) Every Human Resources office should have a copy. Here's the link to download the PDF or request a hard copy.

3. Some articles I read this week that were worth checking out:

4. Yum Alert: Skinny Dippers. Got a chance to sample these this week. Pre-portioned ices (think Otter Pops from back in the day) but yum way better.


They come in two flavors: Tangy Tangerine and Frosty Lemon. I'm still debating which I liked more. I think I'm leaning to frosty lemon because it brings me back to summers on Cupsogue Beach on Long Island eating Italian Ices.


The 411: they are gluten free, sweetened with Splenda, no sugar and low sugar alcohols, 0 cals. Give 'em a try. Go hit them up on Facebook and tell 'em Eggface sent you.

Strawberry Shortcake Protein Popsicles

Beating the summer heat in a healthy, weight loss surgery friendly way. Here's a current favorite recipe for a delicious high protein popsicle...

Shelly's Strawberry Shortcake Protein Popsicle


How to Make Protein Popsicles

What you need:
1/2 cup Greek Yogurt (I use Plain)
1/4 cup Protein Powder (any flavor will do)
2 Tablespoons Sugar Free Torani Syrup (any flavor)
Small Dixie Cups
Aluminum Foil
Popsicle Sticks (Michael's, 99 cent store, Dollar Tree)

Mix yogurt, protein powder, and sugar free syrup together till well blended. You can add chopped fresh fruit just be sure to chop it fine.


This time I made a batch of Celebrate Vanilla Cake Batter ENS Protein Yogurt and a batch of Celebrate Strawberry ENS Protein Yogurt with added chopped fresh strawberries.


Fill the Dixie cups. I put the Strawberry Protein Yogurt in the cup first then topped it with the Vanilla Cake Batter Protein Yogurt.


Cover the top of the cup with foil. Insert a stick through the center of the foil. The purpose of the foil is to hold the stick in place while the pop is freezing and catch drips when eating :) Put Popsicles in freezer for a few hours. Remove the pops from the freezer and peel off the Dixie cup. Enjoy, yum!


These are perfect for newer post-ops, a great way to get a frosty "treat" that is packed full of protein. Leave chopped fruit out if you haven't advanced to that stage yet and when in doubt print out the recipe and share it with your medical posse for their thumbs up.

Lotsa Love for Leftovers 6

Post weight loss surgery when you eat out in a restaurant it's a given there will be a lot of leftovers or waste. I hate wasting food. Sometimes I have no choice if I'm headed to a movie or I'm too far from home but if I'm heading home right after a meal you better be sure the leftovers are coming home. Those leftovers can be "repurposed" and transformed into a bunch of great meals.

Repurposing: Transforming leftovers into something equally as yummy. The goal is for them to taste & look so completely different you don't realize you are having leftovers.

I was really feeling like a steak last night. We're in a bit of a heatwave and I wasn't feeling the whole standing in front of the BBQ to cook them. Air conditioning and no dishes was more what I was feeling. So I took my Mum to a local restaurant that has GREAT steaks (locals: believe it or not it's Richie's Diner. Go. I'm serious, so good.) My order: Filet Mignon, cooked medium. It came with salad. My Mum and I split an order of grilled veggies and mushrooms. I ate 1/2 the steak, the salad and a few of the veggies and mushrooms.

These were my leftovers. About 4 oz. of steak and a 1/4-ish cup of veggies.


Today those leftovers became this AWESOME lunch...


Shelly's Steak Stuffed Mushrooms

4 oz. Steak Leftovers, chopped
1/4 cup Leftover Cooked Veggies (any zucchini, peppers, onions, whatever)
1/2 teaspoon Oregano
1/2 cup Cottage Cheese
2 oz. Feta Cheese (I used Tomato Basil Feta)
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
Around 10 Large Stuffing-size White Mushrooms
2 Tablespoons Parmesan Cheese for topping

Clean and remove the stems from mushrooms. Set aside. Chop steak somewhat fine. Set aside. Blend veggies, cottage cheese, feta cheese in a mini food processor or blender till smooth. Pour into a bowl. Add steak and seasonings. Mix till well combined. Stuff mixture into mushroom caps.


Arrange on a lightly oiled Pyrex dish or baking sheet. Sprinkle with Parmesan cheese. Bake at 350 for 30 minutes.

Since the size of mushrooms will vary, any leftover mixture would be great on a Tortilla Pizza. I served these for lunch with a spinach, cucumber and tomato salad with a sprinkle of toasted almonds and a drizzle of store-bought vinaigrette dressing. It was a delicious and packed with protein meal and you would NEVER know it came from a Styrofoam box of leftovers.

1. Love these... get any soft cheese (Sugar Free Torani sweetened Ricotta Cheese, Goat Cheese, Brie, one of those Laughing Cow wedges, whatever you like. Spread cheese on an apple slice. I warm the cheese slightly under the broiler (like 2-3 minutes) then top with toasted nuts.

Saturday I took my Mum to Red Lobster for Dinner. My order was the Build Your Own Meal. I chose Shrimp Scampi and Crab Legs and Sliced Tomatoes as the side dish. It comes with a Garden Salad (I ask for no croutons and dressing on the side.) I know my capacity pretty well now so I remove and box 1/2 my dinner right away. I ask for a box when I order, they look at you weird but I just say, "I'm not terribly hungry and I know I will need a box so can you just bring it with the food."

I ate my salad, the crab legs and the sliced tomatoes and I was happy as a clam

Shelly's Shrimp Alfredo Pasta-less Zucchini Pasta

1 Large Sweet Onion, sliced (Vidalia or Maui but regular yellow would be fine)
4 small-medium Zucchini, julienned
3/4 cup Storebought Alfredo Sauce
4 Tomatoes, chopped
12 or so Leftover Cooked Shrimp (I used Red Lobster Shrimp Scampi leftovers)
1 Tablespoon Fresh Basil, chopped
1 teaspoon Oregano
Salt to taste
a few twists of Black Pepper
Parmesan Cheese on top

Slice onion into thin slices. Saute until slightly golden. You can make the "zoodles" zucchini noodles using a spiralizer or if you don't have one of those a julienne peeler will cut the zucchini into julienne strips. Add to the onion.


Remove tails and chop leftover cooked shrimp.


Add seasonings, sauce, shrimp, tomatoes. Stir to combine.

Continue cooking till zucchini is cooked to desired doneness, stirring occasionally, about 8 minutes or so. Sprinkle with cheese and serve.

It was delicious and dare I say it even better than the original restaurant meal. So the next time you are at a restaurant bring home those leftovers and repurpose them.

A day in my pouch

My yesterday in post weight loss surgery eating...

Breakfast: Made a batch of Protein Granola (it's basically my CLICK'n Granola but using any protein powder) this time I used Vanilla Protein and instead of cinnamon I used Pumpkin Spice. When it was cool I sprinkled a handful on some Greek yogurt (sweetened with Sugar Free Torani Syrup and a dash of Pumpkin Spice)


Shelly's Protein Granola

1/3 cup Oatmeal, dry
1/3 cup Sliced Almonds
1/4 cup Pecans, chopped
1 scoop Protein Powder (your favorite flavor this time I used Vanilla)
1/2 teaspoon Cinnamon (or this time I used Pumpkin Spice)
3 Tablespoons Sugar Free Torani Syrup (your favorite flavor, I used Sugar Free Vanilla)
2 Tablespoons Almond Butter
1 Tablespoon Butter

Mix together with a fork till clumps form. Sprinkle clumps of the topping onto a baking sheet (I lined it with foil for ease of clean-up) and bake for 20 minutes at 350. Allow to cool. When cool store in sealed container for several days.


Makes a yummy crunchy topping on Sugar Free Pudding and Custard, Greek Yogurt, Protein Ice Cream, fruit or on its own. Place a little in a snack size Ziploc for an on-the-go snack or breakfast.

Lunch: Turkey Burger and Tomato Salad (sliced tomatoes, oregano, basil, mozzarella cheese)


Shelly's Turkey Burger

3/4 pound (about 1/2 a package) Ground Turkey
1 Egg, beaten
1/4 cup Oatmeal, dry
1/2 teaspoon Oregano
1 Teaspoon Bagel Spice (basically it's poppy seeds, minced onion and garlic, white and black sesame seeds, caraway seeds and salt)
a few twists of Black Pepper

Mix all ingredients together. Divide into 4. Shape into patties. Saute in pan (I use a little olive oil or Pam) till golden brown. Flip and continue to cook till cooked through.

Dinner: Sat outside on the patio, under the electric stars and conducted a Gouda taste test. The other day when I near the beach I stopped in a Whole Foods and as usual couldn't resist the cheese section. I always leave with 2 or 3 to try. It just so happens they were all varieties of Gouda. The cheeses: UnieKaas Vintage Grand Ewe, Robusto, and (my fav) Yodeling Goat Gouda with some nuts, sliced apple and cucumber.


Frugal $ Tip: instead of getting the pre-cut packages of cheese which are usually too large a quantity for us weight loss surgery altered chitlin peeps to consume, ask them to cut a tiny lump (under 1/4 lb) of whatever you want.


I usually get 2 or 3 different cheeses to take home and try and spend less than one large piece would have been.

Snacks: Too much coffee, samples at the "Costco Buffet" (an inch of Italian Sausage and Hot Dog) they were closing up samples usually us weight loss surgery post-ops can score a free lunch at Costco ;) it was late in the afternoon and I decided to buy another fan. We have had a mild summer so far but I hear that is about to change. This fan is for the garage where Charlie my cat likes to hang out. Oh and I drank about 1/2 of an Oh Yeah RTD Ready to Drink Strawberry Protein Shake.
