For those of you new to this rearranged guts thing near Christmas here's a packed with protein festive dessert for you so you can still be part of the celebrating! Don't be surprised if you have to fight the non-ops off. Especially the 1980's born family and pals that remember JELLO 1-2-3, this totally reminds me of it...
Shelly's Berry Merry Christmas Fluff
1 cup Boiling Water
1 box (4-serving size - the small one) Sugar Free Strawberry Jello Mix
3 1/2 oz. (about half a small container) Greek Yogurt
1 single serve packet Celebrate Vitamin's ENS - Multivitamin, Calcium, & Protein Shake in Strawberry flavor
1 Tablespoon Sugar Free Torani Syrup
Optional: 1 1/2 cups fresh or frozen, defrosted Fruit (I defrosted some cherries from the summer)
In a quart sized bowl pour boiling water slowly over jello mix. Stir till dissolved. Set aside.
Mix yogurt, ENS & Torani syrup (I used SF Strawberry but most any fruity flavor or SF Vanilla would work) together till well combined. Add to Jello mixture. Beat with an electric mixer till well combined. I use this gadget.
Place in fridge for 1 hour. Remove from fridge and beat again for 5 minutes till fluffy. This is where you would add optional fruit. Put back in fridge and allow to set fully (about 2 hours)
I served a scoop with a squirt Homemade No Sugar Added Whipped Cream. You can use any Jello flavor, any Torani Syrup flavor. If you are cleared for fruit it makes this even more delicious but if not just omit, still super yummy.
