My Really Happy Meal

This super cool Bento Box lunch beats old Ronald McD's not-so-happy meal any day.

Pink Box (top left): Mixed Green Salad with Sliced Almonds and Unsweetened Dried Cranberries
Orange Box (top right): Shelly's 5 Minute Chocolate Protein Cake Stars (recipe below)
Blue Box and Mini Blue Box (bottom left): Naked Nuggets (see my review) and Sweet Onion Vinaigrette for dipping nuggets & salad
Green Box (bottom right): Shelly's Roasted Corn Bites (recipe below)

Shelly's 5 Minute Chocolate Protein Cake

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix (I use this)
2 Tablespoons Cocoa
1 scoop Chocolate Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug

In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil and combine thoroughly. In a separate bowl, mix pancake mix, cocoa, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes (my microwave is getting old and needs 20 seconds added now.) Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices. Place cookie cutter in the center of each slice and cut out shapes. Leftover cake scraps are great tossed into a batch of Protein Ice Cream.

Shelly's Roasted Corn Bites

1 cup Roasted Corn
2 oz. jar Pimentos, drained
1/4 cup Salsa, drained
2 Green Onions, diced
1/2 cup Cheddar Cheese, grated
5 eggs
a few twists of Black Pepper
1/2 teaspoon Kosher Salt

BBQ corn till golden. Cool. Remove kernels from cob.

Mix all ingredients together.

Spoon into lightly greased (Pam works great) mini muffin tins. Bake for 30 minutes at 350. Makes 24.

These are agreat. Not a fan of pimentos so I substitutes chopped chilis. How about something w/ black beans or a zucchini? Thx again!

I have a quick question about the bento box. Does it absorb odors? I want to purchase one, but I have a thing about odors.

Not so far. I don't use mine everyday but at least several times a week for the past few months. I have put vinegary (salad dressings and stuff) and tomato stuff in and no odors remained after washing.

I have been all over the Triangle (NC) looking for Naked Nuggets, and am sad to say, can't find them :-(

My second comment is more of a request: I will be traveling to China in the Spring of 2010 and have been trying to come up with protein snack ideas that travel well w/o refrigeration. So far my list includes some homemade granola and Oh Yeah bars. That's all I've been able to come up with. Would love some additional ideas.

I know this is a year after you posted this, but I wanted to say that after almost a year of looking at your protein cake recipes and thinking "I have got to try that" I finally found a protein powder I liked enough to try it with. OMG, this is good. It's moist and tastes like a really good cake-like brownie. Thank you for being so awesome!!!
