May is National Salad Month. I live on salads in the summer months in the Southern California Valley. We get HOT here... triple digits for a few weeks. Today's lunch was a variation on a Salad Nicoise: a simple Tuna Salad made with celery, green onion, green yogurt, and a sprinkle of dill served with kalamata olives, hard cooked egg, and tomato in a leaf of romaine lettuce so you can eat it like a taco. Simple, low carb, packed with protein and delicious.
