Shelly's Pistachio Protein Ice Cream

2 Tablespoons Sugar Free Pistachio Pudding Mix
1 cup Vanilla Soy Milk (or Regular Milk)
2 scoops Vanilla Protein Powder
1/4 cup chopped pistachios, toasted

Toast 1/4 cup of chopped pistachios for a few minutes in a dry pan. Set aside to cool. Mix together milk, protein, & pudding mix. I used this gadget to mix it up. It makes it airy and lump free. If you don't have one of those... just put it in the blender on super high you want it to be frothy. Pour into ice cream maker. Follow your machine's instructions for freezing. 5 minutes before done add the chopped nuts. You can eat it right away it is soft serve-ish but I like to put it in the freezer to set for an hour. Top with a squirt of Land o'Lakes Sugar Free Whipped Cream.

Made the chicken burgers with spinach, sun dried tomatoes and a Mediterranean mix of cheese. OMG They came out soooooo good. I broiled them though (raining) and they are heating up well for leftovers. I was really surprised!

No way!!! Pistachio?? My favorite! I tried out my new ice cream maker last night and made your chocolate carmel ice cream. OMG, let me just say, I've never been able to use the protein powders before, but it was delicious!!!! Tonight i'm trying the strawberry cheesecake! Then it's onto Pistachio!! BTW, I doubled the recipe since i have an ice cream addicted husband, he loved it too. The ice cream maker handled it with no problem!

I can't wait to try all these! Ice cream is my biggest weakness and although I'll definitely not want to do it when I have surgery with dumping, this shall be a great alternative!

Is there a particular brand of protein powder you like to use in these? I ask only because I'm a little gun shy with protein powders, but I think frozen it might not be so bad.

LOL I'm cranking out batch after batch. It's addictive. I'm glad I have neighbors with kids to help taste test.


Jennifer: As your nut/Dr but you should be able to have these fairly quickly (without nuts and additions like that)


Neen: I use Max Protein by SEI Energie Nutrition. Here's the info on mine but yeah any will work out great.

I have this recipe going in my new machine as I type this. I tried a chocolate one the other nite. I think I might be doing something wrong - I let it go about 25 minutes and it was frozen solid on the sides and liquid in the middle. I could barely scoop it out and ended up scratching the freezer bowl (duh!) So I am curious to see how this batch comes out. I made sure all the parts are together right. the middle arm insert doesn't spin, right? just the bowl spins around it. how do you scoop yours out? any tips?

Hey Tara,

Sounds like your freezer cylinder wasn't cold enough (the cylinder spins but the arm doesn't) Freeze it overnight (you shouldn't hear any sloshing when you shake it) It is soft serve after about 20 minutes and a bit to sloppy to scoop so I use a plastic spoon (big server spoon) to scoop it all out and freeze it in a tupperware for about 1 1/2 hours. Then it's perfect scooping consistency.

Pistachio ice cream has always been my very favorite. In fact, my last meal before my pre-op liquid diet consisted of a triple dip cone of pistachio ice cream. :) Your healthy version is just as good as I remember the real thing being.

Broke down last week and got the ice cream maker. Made Pistachio and my father in law raved about it!

When my hubby told him it was SF Protein Ice Cream, he was shocked of course!

Awesome. Almond milk did not work out very well for me. I stick with regular or soy (silk vanilla or soy dream vanilla is my fav) serving size will vary really... I make a double batch usually at a time and I get 4 or 5 times from it.
