All the talk of donuts got me wanting some so I made a batch. I've made plain chocolate, a spice, a berry, and a coffee version. These I'm calling chocolate mocha (coffee & chocolate combo) Yum! So Happy Chanukah (or is it Hanukkah) to all who celebrate.
Shelly's Mini Chocolate Mocha Protein Donuts
1 cup Almond Flour (aka Almond Meal) (Trader Joe's, health food stores, online or make your own)
1/2 cup Chocolate Protein Powder
1/2 cup Multigrain Pancake Mix (I use this)
1 teaspoon Baking Powder
1 Taster's Choice Instant Coffee Tube
1 Egg, beaten
3 Tablespoons Sugar Free Torani Syrup (I used SF Vanilla)
1 Tablespoon Canola Oil
1/4 cup Water
Super Groovy Mini Donut Pan
Preheat oven to 325. Mix all ingredients till well combined. Spray Mini Donut Pans with Pam. Fill 1/2 full with batter (batter is the consistency of brownie batter).
4 Mini Sugar Free Chocolate Bars (or milk, dark or white chocolate)
1 Tablespoon Sugar Free Torani Syrup (any flavor will do)
Nuke for 30 seconds or so till melted. Stir to combine. Coats 12 donuts.
For colored/flavored frosting: combine SF white chocolate & 3 drops or so of food coloring, SF Syrup and nuke for 30 seconds or so till melted. Stir to combine.
Dip cooled donuts into chocolate glaze and then into optional toppings.
Crushed SF Candy (SF Candy Canes, SF Malted Milk Balls, SF Jordan Almonds)
Toasted or Untoasted Unsweetened Coconut
Crushed Nuts (Peanuts, Hazelnuts, Almonds)
Crushed Sugar Free Cookies
Peanut Butter Flour
SF Cocoa Powder

Love the donuts...have 6 more weeks and then I am clear to have an full/regular diet...will be making these then for sure!
Also the "potato" pancakes...i have been craving those and my local deli lady where I usually go for lunch has them...so bad!

I love your donuts so much I purchased a donut cooker thingy. It is electric and looks like a george forman. Everytime I make them they are gone in not time. Thank you for all the inspiration and wonderful recipes.

I have lost 82lbs. doing the liquid only medifast, now I am transitioning into eating 1 meal a day and 5 liquid for the duration of my weight loss. We are Messianics, so we celebrate the Hanukkah, thank you soooo much for this recipe! The aren't the traditional fried in oil, but I think G-d will forgive...
