National Chocolate Mint Day

It's National Chocolate Mint Day. Seriously it is. Google it. So this was my breakfast because a.) I wanted to celebrate the holiday and b.) I still feel like crap and it was about all the energy I could muster this morning after I took a shower. Right now I'm sitting here sipping my shake trying to build up the energy to run a few must do errands... toilet paper is dangerously low.

I apologize in advance to the people of my town for scaring their young children with the crazy-haired walking dead zombie look I've got going on today.


Shelly's Chocolate Mint Protein Smoothie

8 oz. Vanilla Soy Milk (you can use any milk, water or water/milk combo)
1 scoop Chocolate Mint Ultimate Protein
1 Tablespoon Sugar Free Vanilla Torani Syrup
3-4 Ice Cubes

Whiz in blender till smooth. Top with Sugar Free Land o Lakes Whipped Cream and a grating of Sugar Free Andes Mint Chocolate, optional.

Mmmm this shake is soooo good. It tastes just like those Andes Chocolate Mints.

Hi Shelly! I have a quick question for you... have you ever used Carbquik as a replacement for the Multigrain pancake mix in your protein cakes and other recipes? Just curious... I have a box of it and would like to start using it up.

I can't thank you enough for all of your recipes. Recently I've made your Mufaletta bean salad, cottage stuffed peppers, bites... your recipes keep me eating yummy and WLS friendly food. Many, many thanks!

Michelle, Thank you. So glad you are enjoying the blog. I haven't tried the carbquik I've heard good things about it. If it will make pancakes (has a white flour sub/leavening agent in it) then I'm sure it will work. ~M

It worked just fine! I made the chocolate raspberry cake and topped with sf preserves and sf choc syrup. My kiddo even gave it a big thumbs up. Thanks again, and I hope you feel better soon.

Another question - have you ever used the whey nectar to make like a sorbet? Just wondering what they would be like in the ice cream maker.

On the nectar no... nectar was one of the many proteins I tried that I didn't like but you know protein is a really individual thing so if you enjoy it as a drink, you'll love it as "ice cream/sorbet"
