
Shelly's Meatball Lettuce Tacos
Bibb (aka Boston) Lettuce Leaf
Cucumber, diced
2 Cocktail sized Meatballs (I used Aidells Chicken Teriyaki Meatballs)
Shelly's Garlicky Yogurt Dip
Sesame Seeds
Place 2 meatballs per lettuce leaf. Sprinkle with chopped cucumber and sesame seeds. Drizzle with yogurt dip for a little added protein and moisture.
Shelly's Garlicky Yogurt Dip
3 oz. Greek Yogurt
1 Tablespoon Mayonnaise
1/2 teaspoon Minced Garlic
Kosher Salt to taste
a few twists of Black Pepper
Mix till well combined. Can be refrigerated a couple of days. Great as a dip for meats and veggies.
I picked up the Aidells Chicken Teriyaki Meatballs at Costco. They are great. Super easy for those nights you just don't want to cook. They are fully cooked. I just nuked them a few minutes and as they heated I prepped the other ingredients. I had a yummy dinner done in less than 15 minutes. Take that Rachael Ray.Meatball Nutritional Info:

Yeah 1 plus I taste tested a meatball just out of the microwave and ate the end of the cucumber LOL

I'm 6 weeks out from surgery and can't seem to eat chicken yet, but can eat ground chicken/turkey. Are the Meatballs made from ground Chicken?
Yep ground meat like regular meatballs only made from chicken :)
You always find the best stuff at Cosco, I'm going to join tomorrow AND you come up with the best reciptes! Love it.
I buy these for the family alot but have never had any. Tacos sounds like a great and yummy idea!
Glad you found the Aidell's meatballs. These are our favorite meatballs. The best part about them is that my 7 year old LOVES them and he's a picky eater. Just wish we had those naked nuggets that you've talked about in the pastat our Costco. Unfortunately, every store carries different products - boo!!! I always keep turkey meatballs in the freezer, since they are pre-cooked they are easy peasy! (um, until our freakin' microwave died)
I love aidelle's products so I will look for these.
