The strawberries at the
Farmer's Market have been fabulous. I usually buy a 3 pack. One I freeze for
smoothies (frozen berries are way better than ice) and the other two I keep out for my
Strawberry Cannoli and breakfasts like this one.
I like to make these parfaits at night and cover with plastic wrap so they ready and waiting for breakfast the next morning. Great if you have overnight guests. Mmmm...
Shelly's Strawberry Banana Breakfast Parfait 1 cup Strawberries, chopped
1 Tablespoon Sugar Free Torani Syrup (I used
SF Vanilla) or *
a dollop of Banana Yogurt Sauce
2 Tablespoons Sliced Almonds, toasted
Shelly's Banana Yogurt Sauce1/2 Banana
3 oz.
Fage Greek Yogurt
2 Tablespoons Sugar Free Torani Syrup (I used SF Vanilla)
Toast almonds for a few minutes in a dry pan, allow to cool. Mix strawberries and syrup and spoon equally into 2 parfait glasses. Whiz banana, yogurt and syrup in a
mini food processor till smooth.

Pour banana sauce over berries and top with toasted almonds.

These also make a great protein packed dessert. Refreshing and perfect in the summer
after a BBQ. You can even toss berries with a *Tablespoon of liquor instead, even us light weight, weight loss surgery peeps can't catch a buzz on a Tablespoon divided over 2 desserts. Amaretto (Almond), Grand Marnier (Orange), Fragoli (Strawberry), Chambord (Raspberry) would all work nicely, sprinkle over chopped berries and let it soak for a half hour or so. Super yummy.
