My delicious breakfast. Steel Cut Oatmeal topped with warm Blueberry & Almond Compote and a splash of Vanilla Soy Milk. Whole grains, antioxidants, fiber and nutrients. This breakfast is not only yummy but it's a powerhouse of good stuff for your body. LOL See I eat carbs. Mmmmm....
Shelly's Blueberry Almond Compote
1 cup Blueberries
2 Tablespoons Sugar Free Torani or Davinci Syrup (I used Davinci SF Blueberry)
1 Tablespoon Sugar Free Jello Vanilla Pudding Mix, dry
1/4 cup Sliced Almonds
Wash blueberries and place in a glass microwave safe bowl. Add syrup. Microwave for 3 minutes. Using a fork smoosh (a very technical cooking term) any remaining whole berries. Spoon 3 tablespoons on the expelled berry juice into a measuring cup add pudding mix. Stir till well blended and then add that mixture back to the berries. Add almonds. Stir till combined.
Great on top of oatmeal, yogurt, ricotta or cottage cheese.

Shelly's Lemon Blueberry Yogurt Parfait
3 oz. Fage Greek Yogurt
1 Tablespoon Sugar Free Jello Pudding Mix, dry (I used SF Lemon)
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)
1/4 cup of Shelly's Blueberry Almond Compote
a few more Sliced Almonds for the top
Mix yogurt, pudding mix and syrup together till well combined. Spoon into parfait glass. Spoon compote over yogurt. Sprinkle with additional almonds.
