Pizza & Ice Cream

One of my favorite combos when I was a whippersnapper. Still is. Here's a weight loss surgery friendly version of Pizza & Ice Cream but soooo yummy you will never miss the real deal...

My dinner last night...


Shelly's Meatball & Pepperoni Tortilla Pizza - Mission Carb Balance Whole Wheat Fajita Size Tortilla topped with Marinara, a sliced Turkey Meatball (I use Foster Farms Turkey Meatballs nuked about a minute & 1/2 first), Pepperoni, Fresh Mozzarella Cheese, a sprinkle of Parmesan and Italian Seasoning.

Shelly's Oatmeal Cookie Protein Ice Cream Cake

You need:
Stainless Food Ring
Protein Ice Cream
Sugar Free Cookies (I used these)
Sugar Free Torani Syrup

Amounts will vary based on how big a cake you make.

Crush Sugar Free Cookies (I used Sugar Free Oatmeal ones) and add enough SF Syrup (I used SF Vanilla) to make it clump. I needed about 8 cookies and 1 Tablespoon of Syrup. Place food ring on a plate. Fill base with cookie mixture and press to cover bottom (about 1/2 to 1 inch high) Protein bars would work for the base too.

Fill with Cinnamon Protein Ice Cream you get right out of the ice cream machine (soft serve stage)

Shelly's Cinnamon Protein Ice Cream

1 cup Vanilla Soy Milk (or Regular Milk)
2 scoops of Vanilla Protein Powder
1 Tablespoon Sugar Free Vanilla Torani Syrup (on sale now)
1/2 teaspoon Cinnamon

Mix together milk, protein, cinnamon and syrup. I used this gadget to mix it up. It makes it airy and lump free. If you don't have one just toss it in a blender on super high. You want it fluffy almost double in size. Pour into ice cream maker. Follow your machine's instructions for freezing. You can eat it right away it is soft serve-ish (this is the stage you use for Ice Cream Cake making) for scoop-able put it in the freezer to set for an hour. After 2 hours or so you will need to nuke for 25 sec or so to bring back to scoops. If you double the batch of this or any of my Ice Cream recipes double everything but the protein powder... only so much we absorb per sitting so they say.

Cover with plastic wrap and freeze till hard.

Unmold. I used a warm (nuked 20 seconds) damp dish towel to warm sides and the ring just lifts off.

Decorate if desired. I topped with Sugar Free Land o Lakes Whipped Cream and a drizzle of Sugar Free Smuckers Caramel Topping. My cake makes 4 BIG wedges.

This was a super delicious and super quick lunch. Waaaay better than something from the "Panda Place" where the food sits around on the steam tables under heat lamps till you order it. Less than 20 minutes from start to finish. Take that Rachael Ray.


Shelly's Quick Sesame Beef Stir Fry

1/4 lb. (about 4 slices) Cold Cut Roast Beef, sliced into strips
1 Maui Onion, sliced
1 Yellow Bell Pepper, sliced
2 cloves Garlic, crushed
1/2 bag Trader Joe's Thai Style Soy Ginger Carrots*
1 Tablespoon Soy Sauce
1 teaspoon Sesame Seeds

Nuke carrot blend for 3 minutes and set aside. Meanwhile saute onions and bell pepper till golden. Add garlic, carrot blend, soy sauce and sliced beef. Toss together and cook covered till everything is warmed through. Just before serving sprinkle in sesame seeds.

*If you don't have a Trader Joe's near you you can recreate the Thai Style Soy Ginger Carrots with any Asian-style frozen veggie carrot blend, a tablespoon of minced ginger, a few splashes of soy sauce and balsamic vinegar, parsley and some sliced almonds.


Speaking of Pandas... not sure if I mentioned it on the blog yet but the San Diego Zoo has a new baby panda (2 months now) and oh my gosh I could watch it all day. If you have whippersnappers in your life you gotta show them. Soooo cute!

Plan B

I was planning on making my Asian Lettuce Cups for dinner but I forgot one key ingredient... umm Lettuce. I contemplated just eating the filling on its own from a bowl which would have been tasty but then I had a brainstorm.

This turned out soooo good. I mean un-freakin'believably good. Love when screw-ups lead you to better things. Hmmm a metaphor for life perhaps.

Shelly's Asian Stuffed Squash

3/4 lb. Ground Turkey or Chicken (about 1/2 a package)
4 Green Onions, diced
6 Mushrooms, chopped
2 Tablespoons Soy Sauce
1/2 teaspoon Garlic, crushed
1/2 teaspoon Ginger, grated
1 Tablespoon Sherry (do not skip alcohol cooks away)
2 Tablespoons Cashews, chopped
6-8 Patty Pan Squash

Hollow out patty pan squash making "cups" I used a metal measuring spoon and it worked great.

Dice the hollowed out part of the squash. Place the squash "cups" in a Pyrex casserole dish that has been sprayed with non-stick spray.

Saute all ingredients together including the diced squash middles. Use a wooden spoon to break up meat. Cook meat till no pink is seen.

Fill squash "cups" and bake for 45 minute at 350 degrees.

Fall. Don't Fall.

Go outside if you can and enjoy some fresh air. A few deep breaths and I am a new person. Happiness is an attitude, NOT a situation. Focusing on the negative crap (we all have it) or worrying about the future doesn't change a thing in fact there is evidence stress causes us to gain weight. I know when I allow myself to get sucked in to snowball thinking I want to eat. Snowball thinking = you start with one little issue and roll it around in your mind until it becomes an avalanche of crap. Life is full of good and bad things. Focus on the good. Believe me if you opened your eyes this morning there is SOME good.

For those of you sitting and reading this feeling guilty because your weekend was full of crap eating... OK so you made a poor food choice, maybe several... You can't rewind time, so you might as well GET OVER IT. Give away the item & start planning your next healthy meal. Every new minute is a chance to start again (now learning from your mistakes is a good thing too.)
