A day in my pouch is a series of blog posts to show what a typical daily menu looks like in my post weight loss surgery world. What I ate yesterday... Valentine's Day... a few more sweet treats but nothing too damaging.
Breakfast: I made a Onion Frittata: sauteed onion, beaten egg, a few twists of black pepper, a sprinkle of Parmesan. Cook till almost set and finish under the broiler, add a little extra Parmesan when you serve it.

Lunch: It has been just gorgeous weather here this week. Today was 83°F. I made a Valentine-themed Bento Box, brought it outside and kept the cats company while they sunbathed. I wish we could send some warmth over to the U.S. east coast and you guys could ship us over some snow. I figure by the time it gets here it'll be water and we need that desperately. The government needs to work on that... somebody make a call ;)
Pink Box (top left): Sliced Tomatoes with a sprinkle of S&P

More Bento Box Lunches
Bought some great strawberries at the Farmer's Market and gave them a little dip in melted Sugar Free White Chocolate (nuked 1 minute or so, I use Amberlyn brand, available online and often at Costco, they do road shows) and a sprinkle of nonpareils. I stuck them in the fridge for about 30 minutes till they were set. I think they look quite festive.
Cooks Note: Berries must be completely dry when you dip them in melted chocolate. Chocolate will seize if any water gets in it, so wash and let sit long before dipping.
I turned a couple into strawberry pops for the kiddo that lives across the street. I just made a hole in the stem side of each berry and shoved one of those paper straws in.
I had to run few errands. It was crazy busy in town and I got home much later than I thought I would. I was glad I had a pretty easy dinner planned. I made it even easier by picking up a couple of grilled chicken breasts at the supermarket deli, so no cooking really.
Dinner: I made a modified version of my Pimento Chicken Salad. The modifications were delicious.
Shelly's Pimento Chicken Salad V2
2 Grilled Chicken Breasts, chopped
1 stalk Celery, sliced
2 Green Onions, diced
1/2 cup Frozen Peas, steamed & chilled
2 Tablespoons Blue Diamond Chipotle Almonds
3 oz. Greek Yogurt, plain
2 oz. jar Pimientos, drained
1/2 teaspoon Oregano
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
Mix all ingredients together till well combined. Chill. I served a scoop in a romaine lettuce leaf like a taco.

Snacks: Too much coffee always, another strawberry (well LOL... I had to check if they were set enough) and speaking of coffee I made this yummy dessert that I ate while catching up on my American Idol DVR'd episodes. Nothing says Valentine's Day like a decadent dessert but if you are wanting to have the decadence without the damage try this protein packed Tiramisu inspired dessert... a perfect ending to the day.
Shelly's Tiramisu Protein Pudding
1/2 cup Ricotta Cheese
2 Tablespoons Chike Nutrition High Protein Iced Coffee Protein Powder
1-2 Tablespoon Sugar Free Torani Syrup (or sweetener of choice) to taste
Unsweetened Cocoa for dusting
Blend together ricotta, SF syrup (I used SF Belgian Cookie flavor but any would do SF Vanilla, SF Chocolate, SF Irish Cream) and coffee protein powder till well combined. Spoon into demitasse cups dust with unsweetened cocoa. Makes 2: one for you and one for someone you love or both for you ;)
