Ricottage Cheese Pancakes

This was a yummy Sunday morning breakfast. Used some of the great no sugar added dehydrated fruit I've been making...


Shelly's Cherry Vanilla Ricottage Cheese Pancakes

1/3 cup Ricotta Cheese
1/3 cup Cottage Cheese (I used pre-mixed Pineapple Cottage Cheese - Breakstones, Knudsen, Fresh & Easy)
1 Egg
3 Tablespoons Multigrain Pancake Mix (I use this)
1 Tablespoon Sugar Free Jello brand Vanilla Pudding Mix, dry
2 Tablespoons Dried Cherries, chopped.

Whiz ingredients in mini food processor. Spray pan with non-stick spray. Cook on low till golden, place a few dried cherries on each pancake. Flip. Flatten slightly. Cook on low till done. Makes 8 small pancakes. Top with Sugar Free Maple Syrup or Sugar Free Jam. Mmmmm.

My dehydrator has been going non stop... taking advantage of all the super cheap summer produce and the trees in my yard have been helping too. My Asian Pear tree was ready for picking so I dried those this weekend. I made 3 different batches of granola too. Wanna see?

Not only do they look delish, but I think I have frozen blueberries hiding in my freezer just waiting to be romanced. What a lovely union this would make! lol

Shelly, when your dehydrator has an availability try your hand at making zucchini chips. I briefly soaked some 1/2" thick slices in seasoned German vinegar and then sprinkled both sides with sea salt. OMG, yummy!!! Can't wait for some holiday party to share those babies.
