Strawberry Storm

Yet another use for those Naked Nuggets (Breadless Chicken Nuggets) I reviewed the other day. This super yummy salad was lunch yesterday.


Shelly's Strawberry Fields Forever Chicken Salad

Mixed Greens
Fresh Strawberries, sliced
Herbed Goat Cheese, crumbled
Unsweetened Dried Cranberries
Sliced Almonds & Pistachios
Naked Nuggets, sliced
Storebought Sweet Onion or Poppy Seed Dressing

Saute nuggets till golden, slice into strips and set aside. Toss salad ingredients together. Add chicken. Drizzle with dressing.

I love these nuggets. Such a quick and versatile protein source. This was a great summery lunch and would be perfect to eat on a picnic or outside. Too bad our weather didn't cooperate with that idea. We had a huge freak storm yesterday... Thunder, Lightning & Hail! Take a look outside my kitchen window...

I was worried that my tomatoes wouldn't make it through the pelting but I just lost a few leaves and thankfully the little green babies are hanging on.

I am so disappointed, we do not have naked nuggets at our Costco's here in Houston. I've e-mailed Costco to ask them to get them. So if there are any other Shelly followers here in Houston. E-mail Costco. Maybe they'll get the message.

Why is it that hail always manages to come around this time of year, just when the little baby veggies are starting out? Doesn't seem fair! My mom was worried about her's the other day for the same reason.

I am so glad your tomato plants survived they are huge. We just planted our garden tonight so will see how it goes it is the first garden we have ever done wish us luck.

I LOVE this salad and the naked nuggets! I added fat free feta instead of goat cheese and grape tomatoes (just because I love them)! Fabulous! Thanks, too, for proving to me that WLS does not mean boring food!
