I actually had taken food porn of the dish I made with them but with Mum's Day & the contest it never went up. So by request for Jen in Alaska...
Shelly's Baby Zucchini Bake
1 Maui Onion, sliced
3-4 Green Onions, diced
1 lb. Baby Zucchini and/or Summer Squash (3-4 young squash if you can't find these)
8-10 Mushrooms, sliced
3 cloves Garlic, minced
1 cup Bruschetta Sauce (refrigerated fresh pasta section)
1/2 teaspoon Italian Seasoning
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
1/2 cup Mozzarella Cheese, shredded
Saute onions till golden. Add zucchini, mushrooms, garlic, bruschetta sauce and steam saute with the lid on till tender but still firm about 5 minutes. Add seasonings. Mix to combine. Pour into a Pyrex casserole dish. Top with cheese. Bake for 30 minutes at 350 till golden and yummy.
I served this Baby Zucchini Bake as a side with BBQ'd burgers. It was the perfect side. Nice and moist which always help meats like burgers keep heading in the right direction if you know what I'm saying ;)It was 92° yesterday & today is supposed to be even hotter. It is still May? I didn't fall asleep like Rip Van Freakin' Winkle and it fast forward to August? So hotter errr I might need to pack the Super Cool Bento Box and head west to the beach (20°+ cooler) hmmm or maybe a movie in AC. Anyone see "17 Again?" Looks super cute.

I liked 17 Again. I was cute. Typical going back in time to change the future plot, but it was well done. Plus, Zac Efron is a total hottie!! I dont remember boys looking that good when I was in high school!

want to come to Ct??? I had to turn the heat on since it was only in the 60's. Believe it or not we are opening our pool this week on Tuesday. Hopefully the husband bought enough propane to keep the heater firing so the pool is warm for us!! thanks for the recipies, Kathy

How many servings did you get out of this bake? Does it freeze well?
Servings size will really depend on your Dr/nut plan and what I eat as an almost 3 year post-op is a very different amount than a 3 month, 6 month, or 4 year post-op.
I ate 1 scoop with a burger. I ate it all usually I can't get through a whole burger but I was super hungry that day and hadn't had lunch LOL ;)
All my stuff freezes well... it may not look as pretty defrosted and reheated but it tastes just as yummy. I freeze a lot.
