Sunday in the Park

I grilled 1/2 the zucchini I bought at the Farmer's Market yesterday. A brush of olive oil and a sprinkle of a Greek seasoning, few minutes on each side. Lasts a few days in the fridge. Reheat or not. It's great hot or cold.

The leftover grilled zucchini will become Pastaless Manicotti and the other half of my market haul is destined to become Faux "Fried" Zucchini with High Protein Parmesan Dip. Yum. Today some of the grilled made it into my bento picnic lunch...
