National Strawberries and Cream Day!

It's Strawberries and Cream Day! Here are some of my favorite weight loss surgery friendly ways to celebrate with those beautiful, sweet gems...

Shelly's Red White & Blue Strawberry Cannoli

or make these little Strawberry Shortcakes - just Mini Almond Protein Muffins, cut in half, with sliced Strawberries and SF Whipped Cream inside.

Shelly's Mini Almond Protein Muffins

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Almond Torani Syrup
1 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix
2 Tablespoons Almond Meal
1 Tablespoon Sugar Free Jello Vanilla Pudding Mix, dry
1 scoop Vanilla Protein Powder
Pinch salt

In a measuring cup mix egg, milk, syrup, and oil (applesauce or cottage cheese can sub for oil but 1 T divided between 12 muffins is really not a lot) and combine thoroughly. In a separate bowl, mix pancake mix, almond meal, pudding mix, protein powder and salt. Tip dry into wet and stir till combined. Pour into a non stick mini muffin pan that has been sprayed with Pam.

Optional: Place a few toasted almond slices on top of each muffin. Bake at 350 for 10-12 minutes, until knife inserted comes out clean. Makes 12.

Shelly's Strawberries with Vanilla Bean Sweetened Ricotta - one of my favorite breakfasts

I love Sugar Free Torani sweetened Greek Yogurt or Ricotta on berries for breakfast or if you are looking for a Sugar Free Whipped Cream option I either use Land o Lakes Sugar Free Whipped Cream (hard to find though) or I just got this baby to make my own at home...

With this gadget you can have fresh sugar free (or regular) whipped cream any time you want. You fill whipping cream (not heavy whipping just regular whipping) to the fill line. Screw on the top. Insert the CO2 cartridge till it empties, unscrew that. Put the nozzle on, shake a few times and squirt away. It stores in the fridge for up to 10 days just give it another few shakes before squirting.

You can use plain whipping cream or I'm loving making flavored creams with Sugar Free Torani. Here's a bowl of strawberries with a squirt of SF Raspberry Whipped Cream. Nom. I'll be making Chocolate next with some Ghiradelli unsweetened cocoa powder and SF Torani.

I'll be celebrating today since I just picked up some of these babies yesterday from a farm stand near the beach.

Some will be frozen for Protein Shakes like this Shelly's Triple Strawberry Protein Smoothie.

Now what to make?

Hey Michelle!

Are you feeling ok again? Hope the strawberry's lighten up your days! If you want to make something else, what about making a coulis of some strawberry's in quarters and some water. Put both in a pan (you can sweeten it if necessary), let it boil for a minute and let it simmer for a while until it is smooth and soft. Your coulis is ready! You can eat the coulis together with a piece of baked Camembert....... Mmmm great lunch-dish!

Best regards from the Ned's,

I JUST found SF Cool Whip for the first time ever here in SE Michigan, in the freezer section of WalMart. The idea of making it with that fun gadget sounds better. Thanks! I just tried your strawberry shortcake oatmeal yesterday. Yum!

Oh, I haven't had strawberries yet this season but I think those little shortcakes will fill the bill this weekend! Thanks for the great ideas.

All of those look absolutely delicious. The strawberries here this year are especially sweet and huge.
