Sunday in the Park

I grilled 1/2 the zucchini I bought at the Farmer's Market yesterday. A brush of olive oil and a sprinkle of a Greek seasoning, few minutes on each side. Lasts a few days in the fridge. Reheat or not. It's great hot or cold.

The leftover grilled zucchini will become Pastaless Manicotti and the other half of my market haul is destined to become Faux "Fried" Zucchini with High Protein Parmesan Dip. Yum. Today some of the grilled made it into my bento picnic lunch...

Thank you. Wow you've never had zucchini... hmmm mild, sweet, moist, it's a taste not really like any other veggies except maybe other summer squash which I'm assuming you might not have had because zucchini is the most common of the summer squash. Try it. It was the first or second veggie I had post weight loss surgery.

My favorite veggie is zucchini and squash. I had my husband grill it for the first time last week and it was divine!! I also made zucchini and mushrooms and cheese in the oven with parmesan. You might've had chicken in it? I still struggle with chicken but the veggies themselves were so yummy.

I have to say without your blog I would lost with what to make. The first 2 1/2 months I had to be fed through a tube after my surgery because of severe nausea which led to malnutrition and dehydration. I had to learn how to cook and be creative to LIVE so to speak. I got alot of ideas from here so thank you.

What kind of grill do you use? A George Foreman? or an outdoor type?

I realize I am fairly new to your world/blog and Im not sure if you have been told this before or thought of it...but girl you need to get ahold of an agent and get a book deal for your weight loss recipes....You would sell a million, hopefully make a million and let us repay you for all the time and heart you have given us on a daily basis.......Just a thought :)

Marisa, I love zucchini too... goes down so easily and super yummy. Great carby pasta/rice/noodle/potato replacement.

You know what? until now i though bento was a type of food..i mean, i've seen it all over on "cute stuff" blogs but thought it was some sort of rice or something. *facepalm* I love the little box(es) you have and the pics of how you pack yours. Thanks for sharing...
