Last night's quickie dinner...
Shelly's Shrimp & Squash Packet
1 Tablespoon Pesto Sauce (Trader Joes, Contadina, Buitoni. Fresh pasta section)
1 Tablespoon Lemon Olive Oil
1 Tablespoon White Wine
7 Raw Shrimp, peeled & deveined and tails removed
1 cup Summer Squash or Zucchini, sliced
2 Green Onions, diced
1 clove Garlic, minced
1/2 teaspoon of Kosher Salt
a few twists of Black Pepper
Peel and devein shrimp. Mix pesto, wine & oil together and let shrimp marinate in the mixture while you slice the squash & onions. Don't leave the wine out it's a flavor thing. It's 1 Tablespoon and the alcohol cooks out. No one will catch a buzz off the shrimp I promise. Ingredients listed are for one packet multiply it for how many packets you are making. Place all ingredients in center of a piece of heavy duty foil (if you are using the $1 store stuff double it)
Fold the foil over and seal each packet. BBQ 15 minutes in covered grill. Open packets carefully (steam burns are not fun) and mix with a fork lightly before serving.

This sounds wonderful! I don't have a grill. How long would you suggest that I put it in the oven for and at what temp?
Hi Beverly, Thanks :) I'd do hot oven 450 maybe... probably take about 30 minutes. It's pretty intense heat the covered BBQ. Let me know how it goes.

but basically I was researching weight loss surgery, joining websites, forums to learn about what this new lifestyle would be like and I was not comfortable putting up my before picture. So my "eggface" was born. I love to cook, eat, it was cheery... protein too and it stuck... now I don't think I could change it if I tried.
