Mum's Day 2009


I made my Mum a little Brunch this morning and served it to her outside on the patio. It was all weight loss surgery friendly foods because I don't cook any other way and heck I wanted to eat too ;) She loved it.

On the menu: Salmon & Zucchini Bake, Mixed Green Salad with Sweet Onion Viniagrette, Dried Cranberries & Toasted Pecans, Malibu Fruit Salad, and Raspberry Iced Tea.

Shelly's Salmon & Zucchini Bake

3 cups Zucchini, sliced thin
1 Yellow Onion, diced
6 oz. Smoked Salmon (Lox), diced
1/2 cup Spelt Flour
1/2 cup Multigrain Pancake Mix (I use this)
1/4 cup Canola Oil
5 Eggs
1/4 cup Parmesan Cheese, grated
1/2 teaspoon Marjoram
1 teaspoon Parsley
1/2 teaspoon Kosher Salt
a few twists of Black Pepper

Mix all ingredients together till well combined.

Pour into a greased Pyrex casserole dish.

Bake at 350 for 45 minutes or until toothpick inserted in center comes out clean.



Shelly's Malibu Fruit Salad

Strawberries
Blueberries
Raspberries
Frozen Pineapple
Frozen Mango
1 Tablespoon Malibu Rum (or Sugar Free DaVinci Malibu Syrup)

Wash and chop fruit. Splash with Malibu Rum (or Malibu Flavored Syrup) Don't worry about defrosting the frozen fruit by the time you eat it it'll be perfect.


Shelly's Raspberry Iced Tea

8 oz. Tejava Unsweetened Tea
Sugar Free Torani Raspberry Syrup (or any fruit flavor) to taste
Fresh Raspberrries
Ice

I had a coupon for a free 8x10 from Rite Aid and blew this one up for her.

I'm making her a special dessert tonight. If all goes well :) I'll snap some food porn for ya.

this was my 2nd Mother's day without my mom. Still miss her as much today. My guys were very good to me. I got a phone call from my son in Afghanistan. Wonderful to hear from hom but still makes the day bittersweet. Enjoy your Mom while you can as much as you can. There is nothing like having your mom for a friend.

I have to agree with Tarheelwife. I was doing fine today, even though my daughter lives far away, she had sent me a wonderful card and gift earlier in the week, and she called me today. I had a nice lunch and spent time with my sister (whose only child also lives out of state) and we watched a movie together. But when I drove home..drove by the homes of some of my Mom's friends and could see all the cars of their children there and it just made me cry. I feel jealous of people who still have their moms. Happy for them, but jealous. This is my 9th Mother's Day without my Mom. You never stop missing them. So hug them while you can!!

I spent the afternoon with my mom, my sister (and her son), and my brothers wife (and kids) having a big family thing together to celebrate all the moms in our family. I'd be lost without my mom, for that matter without my father as well. Depressing to think about that to be honest.

Shelly, I don't know if you email folks much related to this surgery & what happens after it all. But I had mine in Sept 08, RNY, and I have a lot of questions and I'm hoping you may have answers that could help me out. If there is any chance I could talk to you about it and get some guidance and just someone to talk to that went through this, well, I'd be very grateful for it. Thanks. -- jeff

Your mum is one lucky lady! Then again, I get the feeling you are one lucky daughter, too. . .
It looks like you and your mum have a wonderful relationship. You should cherish it - and I'm sure you do!

Albertsons has this thing where you get 10 free prints on one of those machines. it says you have to let them show you how to use it, but i was doing good so my lady walked off until checkout time when she put in her code and i got 10 free prints!

I was also wondering about sweetners and sf products. I've been told by people that they are bad for me cause of like, chemicals or something, but that's all we can have! are they really that bad?

On the SF Sweeteners my standard line is... we all have to die of something. I'm going out drinking a Sugar Free Cinnamon Dolce Soy Latte with a smile on my face :)

Hi Shelly,
I came across this post much later then your original posted date, but I have a question. Do they still sell the Da Vinci Malibu syrup? Haven't been able to find it. Besides regular rum, I was wondering what to try.

Any SF Syrup will work... SF Vanilla is delicious in it, SF Coconut. Combo. No I think SF Malibu DaVinci is discontinued at least I haven't seen it in awhile.
