Quick Breakfast: Frozen Oatmeal Discs

These Frozen Oatmeal Discs are the homemade version of the frozen oatmeal you can buy at Trader Joe's but customized to your taste. Make a little more oatmeal than you need one morning and turn the leftover extra oats into this quick and easy breakfast. A great weekend project with the kiddos.
 

1 cup or so of cooked oats (any instant, rolled, steel cut) fills 6 muffins (FYI: that's 4 packets if you use instant.)


Lightly spray a 6 cup muffin tin with Pam (or if it's a good non-stick one it's not really necessary.) You can flavor or sweeten the oatmeal any way you like. I put a pump or 2 of Sugar Free Vanilla Torani Syrup in mine. If you want a boost of protein you can mix a scoop of protein powder or powdered peanut butter in the oatmeal. Divide evenly into muffin tin.


Top (left to right): Peanut Butter and Sugar Free Strawberry Jelly. Blueberry with Almonds. Banana with Toasted Coconut.
Bottom: Raspberry, Banana and Blueberry. Banana, Pecan, SF Caramel Topping (Smuckers). Raspberry with Almonds.

Top with whatever toppings your heart desires. Place in the freezer several hours or overnight. Pop out (run a knife around the edge and they pop out perfectly) and place in a Ziploc freezer baggie. Keep for up to a month. Whenever you want grab an oatmeal disc drop it in a microwave safe mug or bowl and nuke till warm in the microwave 1 to 2 minutes. Top with a splash of milk if you like.


Great to take with you to eat at work or when you are running late in the AM but still want everyone to have a warm breakfast. 

Some other topping ideas: Apples, Cranberries, Raisins, Cinnamon, Walnuts, Seeds, Pumpkin Puree, Peaches, SF Chocolate Chips, Dried Fruit.

These look great! I've used so many of your recipes. If I was going to add protein powder, when would be the best time?

You can add protein into the water or milk you cook the oats in or mix it in to the finished product.

Do you cook the steel oats first or just mix it all together stick it in the oven?

Hi,
I absolutely love your website and all the recipes you put on here. Cooking on a banana tummy can be a challenge, but you proved that it CAN be done. Thank you for that.

I was wondering when you freeze these in the muffin tin, do you first place them in a plastic bag? Or do you pop them in the freezer for a few hours, then put them in the bag once frozen? I'm trying to figure out how to make about a month's worth of these without them getting freezer burn. Any suggestions or tips would be great.

Hi Tia, Thank you :) I place them in the freezer for a few hours and then pop them out and place in a freezer bag. I never make more than 6 but for more (longer storage) I might wrap in plastic wrap or double bag them.

I seldom make porridge in the morning, but thinking I will make some porridge discs on the weekend and keep a week's supply in the freezer at work! My commute is an hour, and would be great to eat a little later in the morning! Thank you for you creativity!
