Sunshine Bento

It was a beautiful day yesterday and I took advantage of it. I packed up my super cool bento box and walked to the park down the street to soak up some of the sun's Vitamin D.

Pink Box (top left): Provolone, Ham, and Turkey Cold Cut Roll-ups
Green Box (top right): a few homegrown, just picked, warm from the sun tomatoes and (in the little blue box) Shelly's Pimento Yogurt Dip
Blue Box (bottom left): Shelly's Street Fair Sausage & Pepper Bites
Orange Box (bottom right): Shelly's Apple Cinnamon Protein Mini Muffin

Shelly's Street Fair Sausage & Pepper Bites

Mild Italian Sausage (2 links with casings removed)
1 can (4 oz.) Green Chilies, diced
1 jar (2 oz.) Pimentos, drained
1/2 cup Italian Blend Cheese, shredded
5 eggs
1/2 teaspoon Oregano
1/2 teaspoon Kosher Salt
a few twists of Black Pepper

Preheat oven to 350. Saute sausage till no pink is seen. Breaking it up into bite size pieces with a wooden spoon as it cooks. Set aside to cool. When cool mix all ingredients together. Spoon into lightly greased (Pam works great) mini muffin tins.

Bake for 30 minutes at 350. Makes 24.

Shelly's Apple Cinnamon Protein Mini Muffins

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons No Sugar Added Apple Butter
1 Tablespoon Canola Oil
3 Tablespoons Multigrain Pancake Mix (I use this)
2 Tablespoons Almond Meal (aka Ground Almonds, aka Almond Flour)
1 scoop Vanilla Protein Powder
1/2 teaspoon Apple Pie Spice
Pinch salt

Optional topping:
1 teaspoon Xylitol
dash of Apple Pie Spice

Mix egg, milk, syrup, apple butter and oil and combine thoroughly. In a separate bowl, mix pancake mix, almond meal, protein powder, pie spice and salt. Tip dry into wet and stir till combined. Pour into a non stick mini muffin pan that has been sprayed with Pam. Sprinkle with optional topping.

Bake at 350 for 8-10 minutes, until knife inserted comes out clean. Makes 12.

Love the food porn. yummmy.... I must purchase one of those bento boxes. I have a habit of just getting a salad and I am either not eating enough or eating too much.
You inspired me to also start a blog to keep myself accountable.

Sausage bites look delish! I am loving my protein more and more every day. I think I am getting used to it! Thanks for suggesting it.

So I made some pizza bites. Want to make these sausage and egg bites but how do you reheat them without them getting soggy. The texture killed. Besides that gave some of your pumpkin muffins and dip and stuffed peppers to no surgery peoples and they loved them. Keep it up the food is great

Natalie, I prefer a toaster oven (on bake) or regular oven to reheat bites as it retains the nice golden crispy edges but in a pinch I will do microwave (changes texture)

I saw you had two bites, yet one muffin. Do you consider a serving size one mini-muffin or two? I was wondering since I finally got me a muffin pan and made your pumpkin muffins (YUM). By the way, they work out great at high altitude.

The Babe, Yay! Good to know. I'm so glad you enjoyed them :)

Portion size is something I suggest you discuss with your medical posse. It will of course vary... 4 months, 9 months, 2 years, 4 years out, and every Dr/nut is different and of course every person's calorie load for loss or maintenance will be different.

My Bento Box is such glad you introduced us to this cool "tool" that is just the right size for us. I struggled at first with just what to put in it. I have gotten good with the whole left-over issue. Chicken salad from a rotisserie chicken is by far my favorite (with red grapes and either pecans or walnuts).
