Picnic for 2 with Lemon Poppy Seed Protein Cake

We are in the middle of a gnarly heatwave. It's been humid and nasty which is really unusual for this area. We get hot but it's dry and we usually have a nice late afternoon wind that cools things down quickly. Not this week.

I didn't feel like dinner type food... well I felt like it but I didn't feel like the work involved or having the oven heat up the house... so we packed my Super Cool Bento Box with enough snacks for 2 and went to enjoy the cool breeze from the lake again...

Pink Box (top left): Lightly Salted Soy Crisps and (in the silicone cup) Lemon Poppy Seed 5 Minute Protein Cake Stars
Orange Box (top right): Steamed Edamame
Blue Box (bottom left): Assorted Cheeses (Jalapeno Jack, Colby, Cheddar, Swiss) and (in the silicone cup) Kalamata & Sicilian Olives
Green Box (bottom right): Cherries
Alongside: Peach Green Tea Drink Stick

Shelly's 5 Minute Lemon Poppy Seed 5 Minute Protein Cake

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix
2 Tablespoons Unsweetened Coconut
1 Tablespoon Sugar-Free Lemon Pudding Mix, dry
1/4 teaspoon Poppy Seeds
1 scoop Vanilla Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug

In a measuring cup or microwave safe mug, Mix egg, milk, syrup, and oil and combine thoroughly. In a separate bowl, mix pancake mix, coconut, protein powder, pudding mix, poppy seeds and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes to 2 minutes, 20 seconds (my microwave is getting old and needs 20 seconds added now.) Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.

In an effort to stay cool we've also been coming up with activities in places with AC... movies, mall, library, coffee shops... tonight was Costco. Where I scored a super cute shirt. Wanna see?

Heat AND humidity is yucky! Welcome to our Indiana summers..lol I have been dying to bake so thanks for the recipes! I searched all over town for the way cool mini donut pan and cannot find one...must order it today!!!!! And now I need to try the lemon poppy seed recipe...my favorite stuff! THANKS!

You look super cute in your super cute size SMALL shirt!! It is amazing, isn't it. I'm not in size small (yet), but feel so much better being able to buy clothes in the "regular" stores and not just the plus size ones. I still have a slight 'root beer' belly and so the tops are a little bigger than the bottoms. But it is still fun!

Congrats!!! I've lost 120 pounds thus far and I love being able to pick up a size M/L now! I've got a little more to go but I feel 100 times better than I did when i was big (mentally and physically).

I just had my surgery 5 days ago, and I'm looking forward to making your recipes! I needed to know that I can cook and feed my whole family rather than cook separately for myself. Do I need to know the nutritional values, or will my stomach tell me what my serving size is?

Shelli you look great! I miss you on OH...but I know you are the best for recipes...they are wonderful. I made my DH chocolate cake today and tonight shrimp with apricot sugarfree jam on the BBQ with scallops added. Cool salad also if I have room! Miss you stay cool we are baking too in Central CA.

Not this particular one. I just always make it into a cake (instant gratification) there are a bunch of mini muffin recipes on the blog (no lemon poppyseed) just type mini muffins into the search box under my before & current picture :)
