Out & About

It was 81°F here today. I know. January. 81°F. Crazy?! When you are given a gift like this beautiful weather you have to get outside and enjoy it.

Gone most of the day I packed my super cool bento box with lunch and snacks to help me from making poor choices while away from home.


Blue Box (top left): (in blue silicone cup) Pistachios and (in green silicone cup) Roasted Chickpeas
Green Box (top right): Cutie Clementine
Pink Box (bottom left): Shelly's Ham & Cheese Pea Salad
Orange Box (bottom right): Shelly's Protein Pie (SF Pistachio version)


All the good stuff in a pasta salad without those useless white carbs. You won't miss it at all.

Shelly's Ham & Cheese Pea Salad

16 oz. package Frozen Peas, steamed
1 cup Cooked Ham, cubed (great use for spiral ham leftovers)
1/2 cup Smoked Mozzarella, cubed
2 Green Onions, diced
1 Red Bell Pepper, diced

Dressing
3 oz. Fage Greek Yogurt
1 Tablespoon Mayonnaise
1 Tablespoon Cider Vinegar
1 teaspoon Dried Dill
dash of Kosher Salt
a few twists of Black Pepper

Steam peas and chill. When thoroughly chilled add remaining ingredients.

Pour dressing over and mix till combined. Chill at least an hour before serving.


It's supposed to be more of the same weather-wise today and although I would love to head outside on another adventure today I really need to de-Christmas my house. So the trunks and tubs are out and I'm spending the day wrapping favorite ornaments and cleaning. Oh joy! What's everyone doing this weekend? If you are in the deep freeze. Hop a flight.

Many hands make light work (had that as a fortune cookie once)

You can help me de-Christmas, we'll be done quicker and can all go enjoy this AWESOME weather ;)

I'm not one for hot weather, but I would kill for 81 degrees right now. I'm in MN and woke up to -15 today (yes, MINUS 15). It's so cold my eyeballs freeze up! Maybe I should have a picnic inside with the treats from your bento box? The ham salad looks really good to me! Everything does!! I am going to be in CA later this month (hopefully) so hope the warm weather meets me there!

Thank you so much for your recipes... I'm almost 7 weeks post-op and have already made a few that were appropriate for my nut's dietary plan, and they turned out great!

Quick Q... what do you use in your bento box to keep things cold, like the pea salad? Another Q... do your bento box compartments all come with their own lid? In the photos I've seen on laptop lunch websites, it looked like only two of the four have lids. Just wondering if that gets messy?

Thanks again for the frequent food porn, great tips, and for the assurance that post-op eating doesn't have to be boring.

Hey Michelle,

I have a ton of different bentos. The older model I made bags for & use mini ice blankets. Here's what they look like:

The newer model has a bag that comes with and I use little ice tubes (sporting goods stores) to keep things icy.

The new model (link in the post) has a few more lids and you can buy more too. So far so good though on both models. No leaks. I wouldn't pack soup mind you but creamy dressing like this have been OK, pudding etc.

Hey Kathi, Amazon.com. The link to the item is in the blog entry. They are Wilton brand. I have a few shaoes but I like the squares best two can fit nicely in the larger container.

What a great recipe! I have a pasta salad recipe with similar ingredients that I loved preband. I never thought to increase the peas and add a meat instead of the pasta. I will have to try this soon!

Nicole here....After looking at the forecast for Oklahoma for the next week, you don't know how tempted I am to hop on that plane LOL Sizzling summers, freeze your ass off winters...missing LA more and more.

yeah...that's a wee bit too warm...but it's only 20 degrees here xD

I requested a bento box for Christmas! It's a little alien laptop one xD so awesome!
