My yesterday in post weight loss surgery eating... nom.
Breakfast: Despite the rain yesterday I went to the Farmer's Market. It's a-go even when it rains, only closes twice a year for this big car show the town hosts. I scored some great deals since most of the town hit the snooze button. Got some of those great mushrooms and instead of making my typical Chicken Marsala, I sauteed them and turned them into breakfast.
Shelly's Mushroom Frittata
1 cup Mushrooms (I used a mixture of shiitake, crimini, beech, oyster and some white)
2 Green Onions, diced
a pinch of Thyme
3 Eggs, beaten
2 Tablespoon Parmesan Cheese
Kosher Salt to taste
a few twists of Black Pepper
Saute mushrooms and onions till golden in an oven proof pan. Add thyme and eggs. Sprinkle Parmesan over and when almost set place under the broiler to brown and puff about 5 minutes.
Lunch: One of my favorites...
Shelly's Guacamole Shrimp Cocktail
1 Avocado, mashed
1/4 cup Fresh Salsa (refrigerated section), drained
a squeeze of Lime
a few leaves of Fresh Cilantro, chopped
1/4 cup Cotija Cheese, crumbled
Cooked Shrimp
Mix all ingredients together and use protein-packed shrimp (a 4 oz. serving of shrimp = 23 grams of protein) as dippers instead of greasy, carby chips. Makes enough for 2 of the size pictured. I love my cactus margarita glasses.
Dinner: Mmmmeatloaf! Made these mini meatloaves yesterday and tonight will be the leftovers. Last night we had a little cucumber salad with them but today I'm going to make a Bird's Eye Steamfresh Vegetable Bag.
Shelly's Bacon Onion Cheeseburger Mini Meatloaf
1 Yellow Onion, diced
3 Green Onions, diced
3 Mushrooms, diced
1/2 teaspoon Garlic, minced
1 1/4 pounds Ground Beef (you could use Turkey too, Beef was on sale)
1/4 cup Oatmeal, uncooked
1/4 cup Milk
1 Egg, beaten
1/2 teaspoon Creole Seasoning
1 Tablespoon Worcestershire Sauce
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
4 slices Bacon, halved
Butter/Oil for sauteing
Optional topping: some American cheese broiled till melty and a pickle chip makes it really "Cheeseburger-ish"
Saute onions and mushrooms till golden. Set aside to cool. Soak oatmeal in milk for 1 minute. Beat egg. Add egg and soaked oats to ground beef.
Add cooled veggies and all remaining ingredients (except bacon) Mix till combined. Divide into 8 equal mounds. Form into mini meatloaves or if you have this super groovy pan like me use it (spray with Pam.) Place 1/2 slice of bacon across each little loaf.
Bake for 45 minutes in a 350 oven. Optional: 5 minutes before done place a 1/2 a slice of American Cheese on top to melt.
Snacks: Too much coffee during the day and then in the PM I went to a Christmas Tree Lighting ceremony so I brought Apple Pie Quest Protein Bar with me (I ate a hunk of it) and got a Starbuck's Sugar Free Cinnamon Dolce Soy Latte with 2 pumps of the new Sugar Free Mocha in it = Eggy's Mexican Chocolate Latte!
It was freezing last night and I finally got a chance to wear my new hat. I love it! A couple of weekends ago there was a craft fair at a local church and this nice lady was selling her crocheted works of art. My Mum knits these awesome leaves so I had her embellish the hat and make it more personal. Can't have someone else walking around Temecula in my hat ;) Hope everyone is having a nice weekend!
