Dinner and Leftovers: Salmon

One of my favorite simple dinners is Baked Salmon and Carrots. Tons of protein and vitamins. I almost always toss an extra piece of salmon in the oven so I can turn it into lunch the next day. Sometimes I just have it as is with a dip made from Greek yogurt and dill or blend it with cream cheese and smear it on cucumber rounds or flaked on a green salad. Yesterday I turned it into a delicious protein packed salad.

Shelly's Baked Salmon

Salmon Fillets (about 4 oz.)
a drizzle of Olive Oil
sprinkle of Fish Seasoning (whatever you like, what I use)
a few sprigs of Fresh Dill
a slice of Lemon

Wash and dry salmon. Place in a Pyrex dish. Drizzle with olive oil. Sprinkle seasoning and dill, top with lemon slice. Bake at 350 for 20-25 minutes depending on thickness. Served with cooked carrots with little dab of butter.

My extra piece of salmon became this great salad for lunch the next day...

Shelly's Edamame and Salmon Salad

4 oz. Cooked Salmon, flaked
12 oz. Bag Frozen Shelled Edamame
1 cup Cooked Mushrooms, sliced
2 Green Onions, sliced
2 Tablespoons store bought Teriyaki Sauce
squeeze of Lemon
a few twists of Black Pepper to taste

Cook edamame per package instructions (generally it's boil for 5 minutes then drain) and allow to cool slightly. Saute mushrooms till golden. Toss all ingredients together. You can serve now or chill, either way it's delicious. In the summer this will be going in a bento box and on a picnic.

I used Soy Vey Veri Veri Teriyaki which is garlic, ginger, toasted sesame seeds and soy sauce basically. It's tasty stuff I scored a free bottle the other day so thought I'd try it in this... perfect. It has some sugars but 2 T. spread out over the whole recipe (serves at least 4) doesn't bother me. FYI: On the company website they are giving away a coupon for $1 off right now. Just whatever you do don't accidentally click on the little meat cleaver on the left hand side of the page with your speakers up loud. I almost had a heart attack. I am not a fan of auto play sound effects, music or videos especially since I'm on the Internet often at 3 AM (insomnia)... there ought to be a law.

Almond Breeze "Do Better" Breakfasts

We are all wiser than we were yesterday so now we must use the wisdom to do better. I used to reach for a bagel slathered with butter or deep fried donut to start my day but I can do better. Breakfasts like these mini breakfast oatmeal muffins and cinnamon protein shake made with Blue Diamond Almond Breeze Vanilla Unsweetened Almond Milk are delicious do betters.


Shelly's Mini Breakfast Oatmeal Muffins

1 Ripe Banana, mashed
1/2 cup Blue Diamond Almond Breeze Vanilla Unsweetened Almond Milk
1 Egg, beaten
1 teaspoon Cinnamon
1 teaspoon Baking Powder
1 cup Oatmeal, dry (Quick Cook or Rolled)
2 Tablespoons Sugar Free Vanilla Syrup (or sweetener of your choice)
1/4 cup of "stuff" (raisins, nuts, SF chocolate chips, dried cranberries, or combo)

Preheat oven to 350. Mix all ingredients. My "stuff" additions for this batch were 2 Tablespoons of sugar free chocolate chips and 2 Tablespoons of chopped Blue Diamond Salted Caramel Almonds (Have you tried these!? Yummy!) Spray a 24 mini muffin pan (or 2-12's) with non-stick spray.


Fill each muffin 2/3 way with batter. Bake 20 minutes till knife inserted comes out clean. Allow to cool slightly before removing from pan.

These flourless mini muffins were a delicious start to the day. They could easily be made gluten free if need be because Almond Breeze products are wheat and gluten free just be sure to use gluten free oats and baking powder. They would be great on a breakfast buffet with a fruit salad or build your own yogurt parfait bar.

Shelly's Fauxchata Protein Shake (Horchata without the Rice) 

1 cup Blue Diamond Almond Breeze Vanilla Unsweetened Almond Milk
1 scoop Vanilla Protein Powder
3-4 Cinnamon Frozen Yogurt Cubes

Blend on high. I topped mine with a little No Sugar Added Homemade Whipped Cream and a dash of Cinnamon. Frozen Yogurt Cubes are great to add to smoothies (no ice to water down) or in the summer pop one in your mouth to cool you down on a hot day. Here's how you make them...


8 oz. container Greek Yogurt, plain
1 Tablespoon Sugar Free Vanilla Syrup (or sweetener of your choice)
1 teaspoon Cinnamon

Mix together till well blended. Spoon into an ice cube tray and freeze. When frozen pop out and store in a gallon zipper bag. I added cinnamon to this batch but you can leave them plain or add unsweetened cocoa, powdered peanut butter, fresh or frozen berries, etc.

Oscar Eats: Top Hat Bacon Cheeseburger Sliders

I watched The Oscars even though I didn't see any of the nominated movies. They all seemed pretty emotionally heavy. The real world has been emotionally heavy so I tend to look for happy and light for entertainment. I'll at least have to see the Best Picture winner when it goes to DVD. I like to watch the arrivals, the opening monologue, the :( In Memoriam, Lady Gaga's tribute to The Sound of Music was great and wow...  best speech of the night goes to Graham Moore, Best Adapted Screenplay winner who shared he had attempted suicide as a teen and told those who feel like they don't belong to, "Stay weird, stay different." Awesome and powerful use of those few minutes. In the middle of the show somewhere in between makeup and documentaries (aka the boring part) I made dinner. I made Bacon Cheeseburger Sliders with a little Oscar spin, they are wearing Top Hats!

Shelly's Top Hat Bacon Cheeseburger Sliders

3/4 lb. Ground Beef (or Turkey)
2 Tablespoons Bacon Bits (or Crumbled Bacon)
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
dash of Salt
a few twists of Black Pepper
Sliced Cheddar Cheese
Sliced Tomato
Dill Pickle Sliced

Mix meat, bacon, and seasonings till just combined (do not over mix.) Form into a roll. I use plastic wrap to help make it even. It makes 8 sliders (6 pictured above, I gave 2 to my neighbor).


Grill on one side until browned about 5 minutes, flip cook about 4 more minutes. I use this type of grill pan. It's oven safe so in the last minute of cooking I add cheese and broil until melted.

Add sliced tomato and pickle top hat. You could place them in a Boston (or Butter) Lettuce Cup which was the plan but it never made it on my shopping list. I dip everything... I served them with a Greek Yogurt Horseradish Dip (just plain Greek yogurt and a dollop of fresh horseradish mixed in.)

Breakfast: I woke up with a gnarly headache. I think it's sinus related. We have had Santa Ana winds here. Dry, hot and blowing particles around. Not complaining. I'll take that over the snow you guys on the east coast are dealing with. It did make me have a slow start to the morning and I really just wanted a protein shake and to sit in the sunshine a bit. I had some phone calls to make so it worked out...

Weight Loss Surgery Best Tasting Protein Powder

Shelly's Triple Chocolate Raspberry Protein Shake

1 cup Soy Milk (any milk will do)
1 scoop Chocolate Protein Powder
1 Tablespoon Unsweetened Cocoa Powder
1 Tablespoon Sugar Free Raspberry Torani Syrup
6-8 Raspberries
a few Ice Cubes

Blend on high. Top with No Sugar Added Homemade Chocolate Whipped Cream and I added a sprinkle of nonpareils and a raspberry on top because it made me smile.

Lunch: My lunch was a taste test of a recipe that I've entered into a cooking contest that Food Network has going on right now. It's sort of like the TV show, "Chopped." You are told 4 ingredients you must use and have to create a recipe with them. You can use additional ingredients but the 4 recipe musts were: 6 Cheese Italian Shredded Cheese, Boneless, Skinless Chicken Breast, Red Bell Pepper and Greek Yogurt... some of my favorites. I think it turned out really well and it tasted great... we'll see if it's a "winner, winner chicken dinner" (sorry couldn't resist) but for sure it will be made many times at my house. Here's what I entered...

Dinner: To celebrate Chinese New Year I made a pot of my Chinese New Year Soup (the quickie version.)


I usually make my Egg Foo Young Bites to go with but this time I made those Savory Onion Mini Ricotta Pancakes I made at New Year's, just made them regular size versus mini.


They went very well with the soup. I made 8 so I'll have leftovers to make "sandwiches" tomorrow.


I won $10 on a scratcher. I never play them but I bought one on Valentine's Day and found it bumping around in my purse. I think this Year of the Goat is going to be pretty good. Figured I'll toss a $1 back in for another try (I want a house by the ocean) and use the $9 for a Mum and me coffee date. So maybe a scratcher will be my Chinese New Year tradition and raisins for calendar New Year.

Snacks: Coffee and 4 beautiful strawberries that I dipped in No Sugar Added Homemade Chocolate Whipped Cream. Sooo good.

Time to Act on Obesity Video

Ever been told "all you need to do to lose weight is push away from the table and move more." Did that person live? Kidding.

Seriously though... anyone who is fighting this war on a personal level knows obesity is a complex multifaceted issue and more than the simple math of calories in, calories out. It it were that simple we wouldn't have 93 million Americans affected. Check out this great video that explains what causes obesity and why is it so hard to lose weight through diet and exercise.

Heads up: #YWM2015 National Convention Scholarship Program

The Obesity Action Coalition wants to make attending the Convention a reality for any individual interested in benefiting from this AMAZING 3-day educational event! The Convention Scholarship Program is designed to open the doors up to give any individual the ability to gain the knowledge they need, without letting the expense get in the way.


The Convention Scholarship Program is NOW OPEN and accepting scholarship applications to help bring individuals who would not otherwise be able to attend ‪#‎YWM2015! The DEADLINE TO SUBMIT an application is MARCH 31. Scholarship applications submitted past this date will not be considered.

Please consider taking the time to apply. The form is really quite simple, just a few questions. The need last year was of course greater than the amount the OAC had to award but many people were able to attend who otherwise would not have been... registration, travel, it was awesome. Post Weight Loss Surgery Menus: A day in my pouch

A day in my pouch is a series of blog posts to show what a typical daily menu looks like in my post weight loss surgery world. What I ate yesterday... Valentine's Day... a few more sweet treats but nothing too damaging.

Breakfast: I made a Onion Frittata: sauteed onion, beaten egg, a few twists of black pepper, a sprinkle of Parmesan. Cook till almost set and finish under the broiler, add a little extra Parmesan when you serve it.

Lunch: It has been just gorgeous weather here this week. Today was 83°F. I made a Valentine-themed Bento Box, brought it outside and kept the cats company while they sunbathed. I wish we could send some warmth over to the U.S. east coast and you guys could ship us over some snow. I figure by the time it gets here it'll be water and we need that desperately. The government needs to work on that... somebody make a call ;)

More Bento Box Lunches

Bought some great strawberries at the Farmer's Market and gave them a little dip in melted Sugar Free White Chocolate (nuked 1 minute or so, I use Amberlyn brand, available online and often at Costco, they do road shows) and a sprinkle of nonpareils. I stuck them in the fridge for about 30 minutes till they were set. I think they look quite festive.

Cooks Note: Berries must be completely dry when you dip them in melted chocolate. Chocolate will seize if any water gets in it, so wash and let sit long before dipping.

Dinner: I made a modified version of my Pimento Chicken Salad. The modifications were delicious.

Shelly's Pimento Chicken Salad V2

2 Grilled Chicken Breasts, chopped
1 stalk Celery, sliced
2 Green Onions, diced
1/2 cup Frozen Peas, steamed & chilled
2 Tablespoons Blue Diamond Chipotle Almonds
3 oz. Greek Yogurt, plain
2 oz. jar Pimientos, drained
1/2 teaspoon Oregano
1/2 teaspoon Kosher Salt
a few twists of Black Pepper

Mix all ingredients together till well combined. Chill. I served a scoop in a romaine lettuce leaf like a taco.

Snacks: Too much coffee always, another strawberry (well LOL... I had to check if they were set enough) and speaking of coffee I made this yummy dessert that I ate while catching up on my American Idol DVR'd episodes. Nothing says Valentine's Day like a decadent dessert but if you are wanting to have the decadence without the damage try this protein packed Tiramisu inspired dessert... a perfect ending to the day.

Healthy Italian Chike Nutrition Coffee Protein Powder Recipes

Shelly's Tiramisu Protein Pudding

1/2 cup Ricotta Cheese
2 Tablespoons Chike Nutrition High Protein Iced Coffee Protein Powder
1-2 Tablespoon Sugar Free Torani Syrup (or sweetener of choice) to taste
Unsweetened Cocoa for dusting

Blend together ricotta, SF syrup (I used SF Belgian Cookie flavor but any would do SF Vanilla, SF Chocolate, SF Irish Cream) and coffee protein powder till well combined. Spoon into demitasse cups dust with unsweetened cocoa. Makes 2: one for you and one for someone you love or both for you ;)

Breakfast: If you own a tub of Spiced Chai Protein Powder from making that "protein granola" I love spare a little for this yogurt dip one morning. I dipped fresh mango chunks in it.

Breakfast Weight Loss Surgery Healthy WLS VSG Gastric Bypass Recipes

Shelly's Spiced Chai Yogurt Dip

1/2 cup Greek Yogurt, plain
2 Tablespoons Big Train Fit Frappe Spiced Chai Protein Powder
1 Tablespoon Honey (or Sugar Free Torani Syrup - SF Vanilla)

Mix together till well blended. The honey, mango, chai combo was perfect together sort of Indian. If you can't do honey any sweetener you use would be fine.

6 Greek Yogurt Breakfasts

Lunch: I love salads like this they get even better the next day. This is something that would be perfect to make the day after you make my Quinoa Patties because there is always a spare cup of cooked quinoa from that.

WLS Food RNY VSG Cooking Menus Vegetarian

Shelly's Chickpea and Quinoa Salad

1 can Chickpeas, rinsed and drained
1 cup Cooked Quinoa
1/2 Hothouse Cucumber, peeled and chopped
3 medium Tomatoes, chopped
1 Tablespoon Fresh Mint, finely chopped
2 Tablespoons Crumbled Feta Cheese
1/2 teaspoon Oregano
juice of 1/2 a Lemon
a few twists of Black Pepper

Mix all ingredients together till well combined. You can add a dressing or a drizzle of olive oil... I don't the lemon juice and tomatoes make it's own dressing that is perfect for me. You could add tuna, cooked chicken or salmon to this. I actually intended on putting tuna in but forgot.

Oodles of Bean Recipes

Dinner: I picked up a spaghetti squash at the Farmer's Market on Saturday. I didn't really have a plan at the time but I was chatting with my Mum about foods I used to eat as a kid and it reminded me of a sandwich I loved. It was sausage and ricotta cheese on homemade Sicilian bread rolls. It was sort of calzone-ish. I don't do bread post weight loss surgery and truly I could never replicate my father's bread and anything else would be a disappointment, so why bother. This gave me all the delicious flavors of my childhood.

Bariatric Surgery Weight Loss Fitness Healthy Italian Dinners

Shelly's Ricotta and Sausage Stuffed Spaghetti Squash

1 small/medium Spaghetti Squash
1/4 cup Water
1/2 Yellow Onion, diced
2 Green Onions, diced
1/2 cup Cooked Sausage, Crumbles
1/2 cup Ricotta Cheese
2 Tablespoons Parmesan Cheese (plus another Tablespoon or so for sprinkling on top)
1/2 teaspoon Italian Blend Seasonings (Garlic, Basil, Oregano, Red Pepper)
1 Teaspoon Oregano

Half and deseed the spaghetti squash. Place open end down on a Pyrex baking dish, pour 1/4 cup of water in the dish. Cover with foil. Bake in a 400 degree oven for about 40 minutes. You want a fork to insert easily. Allow to cool slightly. Use two forks to shred the flesh of the cooked squash into "spaghetti." remove as much of the squash as possible leaving the hollowed out skins. In a clean dish towel squeeze the squash to remove any excess water. Place in a bowl. Set aside.

Saute onions till golden. Add sausage and seasonings. Cook for a couple of minutes till sausage is warmed through. I used those Jimmy Dean Cooked Sausage Crumbles. You could certainly saute some sausage meat or use leftover BBQ sausages chopped up. If you are not a sausage fan you could use turkey or beef but I'd toss in some fennel or something to give it a "sausage flavor." Mix ricotta, onions, sausage, 2 Tablespoons of Parmesan cheese and seasonings till well combined. Fold this mixture into the squash until they are thoroughly combined. Spoon everything back into the hollowed squash skins. Sprinkle with a little more Parmesan and bake at 350 for 30 minutes.

Breakfast: Picked up gorgeous raspberries and strawberries at the Farmer's Market this weekend. I used the last of the raspberries this morning for breakfast with a big dollop of ricotta cheese sweetened with a squirt of Sugar Free Torani Syrup (I used SF Almond and it tasted like Sicilian Cannoli filling) and a spray of Homemade No Sugar Added SF Raspberry Whipped Cream.

Shelly's Homemade No Sugar Added Whipped Cream

1 cup Whipping Cream
1 Tablespoon Sugar Free Torani Syrup (any flavor will do) 

Whisk till well combined. 
Every batch I make a new flavor: SF Vanilla, SF Coconut, SF Almond, if you want pink cream like this Sugar Free Raspberry is great. Fill whipping cream to the fill line of the whipper. Screw on the top. Insert the CO2 cartridge till it empties, unscrew that. Put the nozzle on, shake a few times and squirt away. It makes a ton, store it in the fridge for up to 10 days just give it another few shakes before squirting. Great on berries, shakes and smoothies, crepes


You can make chocolate too... I add unsweetened cocoa powder 2 Tablespoons to recipe above and into the whipper... on strawberries... OMG... so good. 

Lunch: A roast beef roll-up, avocado, a few pieces of cheese and because I dip pretty much everything. I mixed up a dollop of Greek yogurt and a little fresh Horseradish (Trader Joe's refrigerator case kind is what I used.) Yum and if you can't breath I recommend it. Clears the sinuses.

5 Things to Do With Cold Cuts

Dinner: Chicken Caesar Lettuce Tacos. This was delicious, a sort of deconstructed Caesar salad. I marinated some chicken breast tenders. I wanted to BBQ them but realized I was out of propane. So baked it was. Still yummy but I think they would be even better with some BBQ char on them. I made a Caesar dressing sort of marinade for the chicken. I'll put the recipe down but I know they may scare some of you so really... a swipe of olive oil and a sprinkle of your favorite seasoning would be delicious. I used Lemon's from my tree. It's a VERY good year. They are falling off I can't use them quick enough.


Shelly's Chicken Caesar Lettuce Tacos

1 Heaping Tablespoon Dijon mustard
juice of 1/2 a Lemon
2 Anchovies
1 Tablespoon Garlic, minced
1/4 teaspoon Salt
3/4 - 1 pound Boneless Skinless Chicken Breast Tenders

Smash the anchovies, salt and garlic together to make a paste and mix into mustard and lemon juice. Place marinade and chicken in a gallon Ziploc, seal. Shake it around a bit to evenly distribute. Refrigerate several hours. Place chicken strips on a non-stick baking sheet that has been sprayed with Pam. Bake at 350 for 20 minutes turning once (or BBQ.) Place a tender in a romaine lettuce leaf, top with Greek yogurt dip and a sprinkle of Parmesan. Eat like a taco.

4 oz. Greek Yogurt, plain 2%
1-2 Tablespoons Parmesan Cheese
a little Lemon Zest
squeeze of Lemon Juice
dash salt
a few twists of Black Pepper

Blend together. Use as a dressing for Chicken Caesar Lettuce Tacos or as a dip for veggies.

I had one and served it with this quick casserole side dish. This would be a great meal in itself, vegetarian friends would love it, maybe toss some peas in for some color. I think I might do it next time as a main dish and add some leftover chicken or sausage in the mixture.

Quick Easy Weight Loss Surgery Friendly Dinner Recipes

Shelly's Indian Cauliflower and Lentil Casserole

1 small head of Cauliflower
1 (10 oz.) package Tasty Bite Jodhpur Lentils
2 Tablespoons Parmesan Cheese
2 Tablespoons Crispy Onions (the green bean casserole kind)
a dash of Salt
a few twists of Black Pepper

Break-up into florets, cook in salted boiling water till knife inserts easily but still firm. Drain. I poured over a package of Tasty Bite Jodhpur Lentils. Mix till well incorporated. Pour into a Pyrex casserole dish.


In a snack sized Ziploc baggie I blended (smoosh them a bit how's that for technical cooking terminology... you want fine crumbs) the cheese, onions and seasoning. Sprinkle on top and bake at 350 for 30 minutes.

I found the lentils at my local Albertson's. I have seen them at Cost Plus World Market too. The link in the recipe is to the companies web site and they have a product finder. If you want an online source here you go, but it's a box of 6. I would use them all... I could see thinning a package out with chicken stock and making lentil soup. Ohh now that needs to happen next chilly day.

Tasty Bite Madras Lentils are a staple in my pantry already.

Snacks: Too much coffee and one of those Pineapple Cottage Cheese Doubles with some of my Spiced Chai Protein Granola crumbled on top. Favorite snack lately.
